Make-Ahead Cauliflower Salad

This roasted tomato pasta dish has a fire-roasted tomato and basil sauce, as well as creamy feta cheese and sautéed shrimp.

Ingredients

  1. 1 pound sliced bacon
  2. 1 head iceberg lettuce, finely chopped
  3. 1 head cauliflower, florets finely chopped
  4. 1 large red onion, shaved thin
  5. 1 cup mayonnaise
  6. 3 tablespoons white sugar
  7. ⅓ cup grated Parmesan cheese
  8. 1 dash ground black pepper

Instructions

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Chop into small pieces.
  2. Layer lettuce, cauliflower, onion, chopped bacon, mayonnaise, sugar, and Parmesan cheese in a large bowl, in that order. Cover the bowl tightly with plastic wrap. Place a heavy pan on top to press down salad.
  3. Refrigerate for 24 to 36 hours, checking occasionally that salad remains pressed.
  4. Toss salad to serve; season with black pepper.

I think it serves more than 8…made this recipe as written. If a serving size is 1 cup, serves approx. 12? Suggestions for next time: use shredded cheese instead of grated. Found it somewhat dry, stir for a long time to get everything coated. Anxious to see how the leftover tastes.

My Mom has been making this for 40 yrs and our family just loves it. The layers are necessary (as one poster asked), because if you are making it the day before you don’t want the lettuce getting limp and soggy. Once everything is mixed, as anyone knows, lettuce doesn’t hold up for long. Delicious salad–our favorite.

Not sure why the layers were so important to this recipe, as I found it difficult to toss when ready to serve. It was good but I’d cut the bacon and onion in half next time. Next time I’ll toss and refrigerate ahead of time but skip the instruction to put pressure on it. Nicely chilled when served!
