Great for salads and sandwiches, this salad substitutes crab with lightness and crispness. A romaine leaf makes a fantastic wrap for a low-carb substitute for bread.

Ingredients

  1. 1 (8 ounce) package mock crab meat, chopped
  2. ½ cup diced celery
  3. ¼ cup diced green bell pepper
  4. ⅛ cup diced scallions
  5. 3 tablespoons mayonnaise
  6. 1 tablespoon lemon juice
  7. 2 dashes adobo seasoning, or to taste
  8. salt and ground black pepper to taste

Instructions

  1. Combine mock crab meat, celery, bell pepper, scallions, mayonnaise, lemon juice, adobo seasoning, salt, and black pepper in a bowl. Cover and chill for 30 minutes before serving.

I did make this using real crab from a can and the entire thing is only 3 net carbs without a bun. It wasn’t bad. I ate it plain but it would probably be better on some good keto bread.

Loved it! Instead of celery I used celery seeds. Delish!

This was absolute heaven served on a grilled buttered roll. I omitted the green peppers (personal preference) and used green onions. The celery adds a nice crunch. This is a keeper.
