Kale Salad with Peanut Dressing

When my son was born over 13 years ago, I first experienced this. I received this dish from my talented cook brother. It is a simple dish that can be prepared in advance and chilled.

Ingredients

  1. ¾ cup peanut oil
  2. ¼ cup rice wine vinegar
  3. 2 tablespoons lemon juice
  4. 2 tablespoons honey
  5. 2 tablespoons soy sauce
  6. 2 teaspoons garlic powder
  7. 2 teaspoons ground black pepper
  8. 1 tablespoon dry mustard
  9. 1 teaspoon salt
  10. 1 teaspoon Worcestershire sauce
  11. 1 teaspoon water
  12. ½ teaspoon sesame oil
  13. 2 ½ cups finely shredded curly kale
  14. ¾ cup finely chopped dry-roasted unsalted peanuts
  15. 10 tablespoons finely grated Parmesan cheese
  16. ½ cup dry-roasted peanuts
  17. ¼ cup finely chopped cilantro leaves and stems
  18. 10 fresh mint leaves, chopped

Instructions

  1. Whisk peanut oil, vinegar, lemon juice, honey, soy sauce, garlic powder, black pepper, dry mustard, salt, Worcestershire sauce, water, and sesame oil together in a bowl until dressing is smooth.
  2. Combine kale, chopped peanuts, Parmesan cheese, dry-roasted peanuts, cilantro, and mint leaves together in a bowl; add dressing and toss to coat. Let salad sit for a few minutes for flavors to blend.
  3. Sunflower oil can be substituted for the sesame oil.

Super zesty and yummy! HOWEVER, there is way too much dressing. I had to strain my salad at the end and almost half of the dressing dripped off. Next time I will half the recipe.

Delicious! Omitted lemon juice and mint but only because it wasn’t on hand. Didn’t have fresh cilantro but squirted some from tube into dressing.

add extra kale — a little too much peanuts and needs more kale but overall delicious!! I tripled the kale and doubled the other ingredients.
