Ingredients
- 1 bunch kale, large stems discarded, leaves finely chopped
- ½ teaspoon salt
- 1 tablespoon apple cider vinegar
- 1 apple, diced
- ⅓ cup feta cheese
- ¼ cup currants
- ¼ cup toasted pine nuts
Instructions
- Massage kale with salt in a large mixing bowl for 2 minutes.
- Pour vinegar over kale and toss to coat. Fold apple, feta cheese, currants, and pine nuts into kale.

I made as it and tried a small amount an it lacked a bit So I took vinegar, mayonnaise an sweetener till it tasted like I wanted to eat by spoonful. I added purple onion, candied walnuts and chopped bacon. It was off the top thank you for I would of never put these together.
A great healthy summer salad! Add shredded carrots and diced celery for more crunch. Sub walnuts for pine nuts and dried cranberries for currants for a change.
Loved this salad! Was surprised how good it was even the next day. I used Aldi Stilton cheese with cranberries and added about a tablespoon of olive oil. I also softened the dries cranberries.

Loved this and got great reviews. Followed as typed, did squeeze 1/2 fresh lemon juice over apple to avoid browning, also added minced red onion and topped with shredded chicken breast for lunch the next day!
I did not have currants or other dried fruits and I substituted the pine nuts with pecans and roasted pepitas (sunflower seeds), but as other reviews said, I think the secrete is the salt massage that makes the kale soft and pleasant to eat. I did add a touch of olive oil. Thanks for the recipe, my husband and I liked it a lot!
Dried cranberries instead of currants works well.
I love this recipe! However, 1/2 tsp of salt is WAY too much. Next time I’ll use less than 1/8 of a tsp.
I didn’t have currants so couldn’t use them. I mixed 1 Tbsp of Olive Oil with the acv. This was delicious! I’ll make this a lot. Thanks so much!
I have been looking for a good kale salad and I found it!!! I was afraid that I would need more dressing but the apple cider vinegar was just enough. No oil, it was perfect.
I was looking for a kale salad that didn’t use gobs of olive oil and was so pleased to find this. I made this for a large family dinner and everyone asked for the recipe it was so good!! I used fat free feta also. They had no idea it was essentially a fat free salad. I also love that it can be made well in advance so could take for lunch all week.
This recipe was exactly what I was looking for – quick, easy, and delicious! I used half garlic salt and half pink salt, since I love a hint of garlic in most everything I cook. I used a Fuji apple, sautéed my pine nuts in lemon EVOO, and man, it feels like a healthy yet filling lunch. Definitely making this again 🙂

I made this and will make it again, the only thing I did different was I added toasted sesame seeds, they made it so much better.
I used walnuts and dried cranberries. Husband loved it! All the guests loved it! Making it again tonight exactly the same way !!!!! Thank you

i made it when i called some friends over for dinner. everyone just loved it!!! i replaced pine nuts with walnuts.
I think I should have massaged the Kale a bit longer … otherwise it was yummy. I replaced the raisins with dried cranberries (personal preference) and the pine nuts with sunflower seeds (because I had them on hand)
I used craisins instead of currants. Did the trick and it’s great!
This salad was delicious. I never knew that massaging the kale with salt makes it so much softer and more edible! I didn’t have pine nuts or currants, so I used pecans and craisins. I also dressed the salad with a lemon and olive oil dressing, similar to a kale salad that I had eaten in a restaurant in Hawaii…..and it was to die for! Thank you, Leslie,for sharing this recipe!
