Pecans are added for texture to a moist chocolate rum and raisin cake. Excellent when served hot with custard and whipped cream on top.

Ingredients

  1. 2 cups cooked turkey meat, chopped
  2. ½ cup mayonnaise, or to taste
  3. 1 teaspoon sweet pickle relish
  4. 1 teaspoon Dijon mustard
  5. 1 teaspoon white sugar
  6. ¼ cup slivered almonds
  7. ¼ cup dried cranberries
  8. salt and ground black pepper to taste
  9. 1 pinch celery salt, or more to taste

Instructions

  1. Mix turkey, mayonnaise, sweet relish, Dijon mustard, and sugar together in a bowl. Fold in almonds and cranberries. Season with salt, pepper, and celery salt. Chill for at least 1 hour before serving.

This is pretty good, but it was a bit too basic for me. It’s a great base though. I added more mustard and would leave out the sugar next time. Some celery and grapes would be really good in it.
