Ingredients
- 6 eggs
- ¼ cup mayonnaise
- 1 teaspoon Dijon mustard
- ½ teaspoon prepared yellow mustard
- ½ lemon, juiced
- ¼ cup chopped green onions
- salt and pepper to taste
Instructions
- Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel. For faster cooling, place the eggs in an ice bath before peeling.
- In a medium bowl, stir together the mayonnaise, Dijon mustard, yellow mustard, lemon juice and green onions. Chop the eggs into big chunks and mix gently with the dressing. Season with salt and pepper.

Loved this recipe! So fresh tasting and delicious! I did not use as much lemon juice because some lemons are larger than others. Added a dash of smoked paprika! It was amazing.
I give it 4 stars because the taste is fabulous! I like to make recipes exactly as written the first time. I thought the juice of half a lemon was a bit much, and it was. It turned out very runny and I found it impossible to make into a sandwich. Next time I will try half a tablespoon of lemon juice.

I did make a change. I did not add dijon simply because i did not have any and I added onion only when i made my sandwich because my husband does not like onion. Also when I made my sandwich, I put Miracle whip on the bread for that little tang I enjoy.
Flavor was good, but I agree with other reviews. Don’t use all of the lemon juice from half lemon. Very tart and soupy result. I had to eat my sandwich with a fork it was too messy to pick up.

Easy and good. I added a half-spear of sour dill pickle as well as some dry dill.
Add ANY amount of mustard of ANY kind to anything – and thats ALL you’re gonna taste.
Add paprika and pickle relish. As is comes out salty (like I like it) but needs pepper. Will try it with more mustard and hot sauce.
