Ingredients

  1. 1 (8.5 ounce) package coleslaw mix
  2. 1 (15 ounce) can crushed pineapple, drained
  3. ½ cup finely chopped onion
  4. ½ cup mayonnaise
  5. ¼ cup apple cider vinegar
  6. 2 tablespoons brown sugar
  7. 1 teaspoon dried cilantro
  8. ½ teaspoon salt
  9. ¼ teaspoon ground black pepper

Instructions

  1. Mix coleslaw mix, pineapple, and onion together in a bowl.
  2. Whisk mayonnaise, vinegar, brown sugar, cilantro, salt, and pepper together in a bowl until dressing is smooth. Pour dressing over coleslaw mixture and toss to coat. Refrigerate.

Followed the recipe as written, just made double. This was a huge hit with all the guys at my husband’s plant. Excellent as the slaw served on top of a pulled pork sandwich. The pineapple balances the cabbage and the vinegary dressing. I am picky about slaw, and I really liked this one too!

I didn’t have apple cider vinegar, so I subbed 3/4 th white vinegar and 1/4 apple juice. I also subbed splenda brown sugar for regular. It was delish!

This recipe is delicious! I used a mix of green and purple cabbage and added a little chopped carrot for color. I didn’t have dry cilantro so just used fresh instead. Will definitely make it again.

Next time be sure and use the slaw mix, Iused a chopped salad mix. also I would use pineapple chunks instead of crushed and less of the dressing – I used all and it was just too liquidy but the taste was great! I’ll get it right next time…..

Delicious Dressing is perfect and easy to make I grate in a little carrot for color and use fresh pineapple as they are abundant here in Hawaii. Fabulous as a side dish or topping for fish tacos

Made exactly according to recipe. Everyone loved it. Make sure that the onion is diced small and pineapple is drained thoroughly. I might try a little jalapeño on the next batch.
