Ingredients
- ½ cup chopped walnuts
- 1 bunch spinach, rinsed and torn into bite-size pieces
- ½ cup dried cranberries
- ½ cup crumbled blue cheese
- 2 tomatoes, chopped
- 1 avocado – peeled, pitted and diced
- ½ red onion, thinly sliced
- 2 tablespoons red raspberry jam (with seeds)
- 2 tablespoons red wine vinegar
- ⅓ cup walnut oil
- freshly ground black pepper to taste
- salt to taste
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Arrange walnuts in a single layer on a baking sheet. Toast in oven for 5 minutes, or until nuts begin to brown.
- In a large bowl, toss together the spinach, walnuts, cranberries, blue cheese, tomatoes, avocado, and red onion.
- In a small bowl, whisk together jam, vinegar, walnut oil, pepper, and salt. Pour over the salad just before serving, and toss to coat.

Loved it!
I served it last night for guests and they never commented on it, but I liked it! One of our guests eats only keto, so I used sugar free jam and lower sugar cranberries so she could eat it. I thought both the avacado and tomato were a bit out of place in it, so I might leave those out next time. I don’t think they added much to the overall flavor.
So delicious! All the flavors combined so well! I used olive oil and added some arugula with the spinach. My husband keeps requesting me to make this dressing.
My favorite salad! My whole family loves it! I used homemade Raspberry jam from the Farmers’ Market. Delicious!

Just made it and my family is obsessed! I grilled chicken breasts to throw on and had to use olive oil for the dressing but otherwise followed the directions. So so so good!

Everyone loved this! My husband doesn’t like raw onions so I skipped those. I also didn’t have the raspberry jam or walnut oil so I skipped those, along with the red wine vinegar, and used a homestyle vinaigrette dressing I had instead. I halved cherry tomatoes and used those instead of 2 larger tomatoes.
Love this salad and like another reviewer mentioned, you can substitute things (and I did.) I used spring mix instead of spinach, pecans instead of walnuts, olive oil and balsamic vinegar instead of walnut oil and red wine vinegar. Also, left out the tomatoes and added a sliced bosc pear. Served it at a dinner party and everyone loved it. The dressing is amazing! This one is definitely a keeper.

I’ve made this several times now and it’s gone over very well each time! Such a great mix of flavors.
I followed the salad recipe and added pomegranate seeds, cucumber and orange bell pepper. I did not make the dressing called for in the recipe. I made a maple balsamic instead as I’m partial to that. I brought it for a Thanksgiving pot luck at work and it was a hit. I will definitely be making this again.

A nice salad, but the picture obviously has apples and cherry tomatoes in it, which aren’t in the recipe. I’d prefer a bit more accuracy.
