Ingredients
- ½ cup chopped walnuts
- 1 pound French green beans, cut into 1 1/2-inch pieces
- ½ cup crumbled feta cheese
- ½ cup thinly sliced red onion
- ⅓ cup dried cranberries
- salt and freshly ground black pepper to taste
- ½ cup balsamic vinaigrette salad dressing
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Place walnuts on a baking sheet.
- Bake in preheated oven until toasted, 5 to 7 minutes. Remove from the oven and let cool, about 10 minutes.
- While walnuts cool, bring a large pot of water to a boil. Add green beans and cook, 5 to 7 minutes. Drain and rinse with cold water; drain again.
- Transfer green beans and walnuts to a mixing bowl and add feta, red onion, cranberries, salt, and pepper; gently toss together. Add balsamic dressing to serve.
- You can use pine nuts instead of walnuts.

Shouldn’t this have green beans listed in the ingredients? I think the “pound of beef consume” might be a mistake. I plan to make this so I’ll rate it later. Okay I made this recipe tonight and it’s definitely a keeper and worth 5 stars. Hubby gave it 2 thumbs up. I used a pound of fresh green beans which I assumed that what the recipe meant when it said “pound of beef consume”.
I love this! I used “Our Favorite Balsamic Vinaigrette” recipe (also from this site) for the dressing. My only suggestion would be to add a bit at a time, until the salad is dressed to your liking before just adding the entire amount. You can always add more if you like. I made this early in the day, and will take it out to come to room temperature before serving. Great side dish!
