Ingredients

  1. 4 cups mixed salad greens such as leaf lettuce, endive, and radicchio
  2. 1 large Granny Smith apple, cubed
  3. ½ cup chopped walnuts
  4. ½ cup crumbled feta cheese
  5. ½ cup dried cranberries
  6. 2 tablespoons finely chopped green onions (Optional)
  7. ¼ cup vegetable oil
  8. ¼ cup blueberries
  9. 2 tablespoons extra-virgin olive oil
  10. 2 tablespoons balsamic vinegar
  11. ¼ teaspoon salt

Instructions

  1. Make the salad: Layer salad greens, apple cubes, walnuts, feta cheese, cranberries, and green onions in a large bowl.
  2. Make the dressing: Combine vegetable oil, blueberries, olive oil, vinegar, and salt in a food processor or blender; pulse until well blended and smooth.
  3. Pour dressing over salad and toss until well combined. Chill for 30 minutes before serving.

11.10.16 ~ This is a great salad loaded with flavor! I made this in single servings and we both loved it and the dressing. We liked the tangy taste that the green apple added to the salad. The dressing is great, and just pulled the salad together. Lucky for us, we have a half a bag of lettuce left, so we are having the salad again, tomorrow.
