Ingredients

  1. 4 small roma (plum) tomatoes, chopped
  2. 1 cucumber, chopped
  3. 1 green bell pepper, chopped
  4. 1 small yellow onion, chopped
  5. 5 tablespoons malt vinegar
  6. 1 ½ tablespoons white sugar
  7. 1 tablespoon olive oil
  8. 1 teaspoon ground black pepper
  9. 1 teaspoon salt
  10. ½ teaspoon minced garlic
  11. 1 (12 ounce) jar kalamata olives
  12. 1 (4 ounce) container crumbled feta cheese

Instructions

  1. Mix tomatoes, cucumber, green bell pepper, and onion together in a large bowl.
  2. Whisk vinegar, sugar, olive oil, black pepper, salt, and garlic together in a small bowl; pour over vegetables. Add olives; toss to coat. Divide salad among four plates; top each serving with feta cheese.

I used balsamic vinegar and no sugar. Also, we’re on quarantine so didn’t have tomatoes but it would definitely be good with them. Good overall. I’ll try again when our tomatoes grow!

I changed out the malt vinegar and used white balsamic (gives a lighter color than regular balsamic) omitted the sugar and added 1 tbs of dried oregano. It was delicious!

This was SO GOOD! Used red bell pepper and omitted kalamatas as I didn’t have any. Added a dash of dill just because.

For a real Greek salad, I agree with a prior reviewer to replace the malt vinegar with balsamic and delete the sugar but you also have to add the key ingredient: fresh chopped oregano, at least a couple of tablespoons. A couple of chopped anchovies also add a great flavor.

This is a great salad as/is! I left out the olives and green bell pepper and left everything else the same. The sugar takes away some of the tang from the vinegar so it wasn’t really sweet at all. Just tangy and delicious. I also added some diced avocado because it was on hand (and a squeeze of lime to prevent browning). Positively yummy!

Replace the malt vinegar with Balsamic, and drop the sugar. Now it’s a great greek salad
