Ingredients
- 2 large cucumbers, peeled and sliced
- ½ cup diced sweet onion (such as Vidalia®)
- 2 tablespoons white vinegar
- 2 tablespoons white sugar
- 1 ½ tablespoons sour cream
- 1 teaspoon salt
- ½ teaspoon cracked black pepper
Instructions
- Combine cucumbers, onion, vinegar, sugar, sour cream, salt, and pepper together in a bowl.
- Cover the bowl with plastic wrap and refrigerate until chilled, 20 to 30 minutes.

Maybe just not my thing. But I think the one review that said 2:1 vinegar to sugar ratio was right.
Pretty good as a base. I added quartered grape tomatoes and 1T fresh dill. Vinegar to sugar ratio should be 2:1, otherwise way too sweet.
Our neighbor just called and asked us to pick his cucumbers out of his greenhouse, “take them all.” Glad he did because we brought them home and I instantly whipped this recipe out. It is so darned good that I could eat it everyday!
We always made this recipe with sliced cukes, Visalia onions, and then squeezed out the water after the salt soak. Then half a cup of mayo and half a cup of french onion dip….super! No sugar or vinegar….

Our version has equal amounts of mayonnaise & sour cream. We also add tomatoes. Yummy

This is most likely the best creamed cucumbers recipe I’ve ever tasted! I’m not much of a cucumber eater but I finished the 1st batch in one sitting. The perfect balance of sweet and sour.
I used English cucumbers, peeled and sliced thin, and ½ an onion, not ½ cup, also sliced thin and quartered. These are delicious, just the right amount of vinegar, sugar, and sour cream.
This was awesome!! I followed the recipe but used Splenda instead of sugar since I’m low carb. Used 3 large cucumbers instead of 2. I didn’t let the cucumbers sweat with the salt too long so I had a lot of juice but that’s ok. Next time I’ll use four cucumbers. I also sliced a sweet onion very thin and added a pinch of dill and garlic. Perfect.
I keep making this. It’s just delicious.
