Ingredients
- 7 cups sliced cucumbers
- salt as needed
- 1 cup sliced onions
- 1 cup sliced green bell pepper (Optional)
- 2 cups white sugar
- 1 cup white vinegar
- 1 tablespoon celery seed (Optional)
- 2 teaspoons salt, or to taste
Instructions
- Place cucumbers in a colander and liberally sprinkle with salt. Set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers.
- Mix together cucumbers, onions, and green bell pepper in a serving bowl.
- Make dressing: Whisk together sugar, vinegar, celery seed, and salt in a medium bowl until smooth.
- Pour dressing over cucumber mixture; stir until evenly coated.

Refrigerator Pickles are awesome. This recipe has WAY too much sugar. Try 1/2 c sugar to 1 cup apple cider vinegar.

Just like “back in the day!” I don’t recall that much sugar; but then, I was 8, and it was the 70’s. (The decade of fructose corn syrup, captain crunch, frootloops, sugar smacks and coco-puffs!) Enjoy as is. Then cut back the sugar on your second try (like an adult).
Way too much sugar. If it try it again, I’ll only use 1/2 cup of sugar.
I omitted the celery seed – and it was then the refrigerator pickle recipe my Aunt and Grandma always had in their refrig. You can keep the brine and just add more cucumbers as they appear in your garden.
This is a great recipe! I did cut back on the sugar and used dill in place of the celery seed. This will be my go be recipe for cucumbers from now on.
I have been making this salad for 65 yrs,I love ground celery seed and dill in mine,the only thing i do differently is when the cucumber start getting watery,I just squeeze them in my hands to get excess water before adding all ingredients,i find red onion tastes best in this cucumber salad.also do variation and use sour cream and use less vinegar,but add the rest of ingredients
We grew up with this on the table all summer long. I always have to check the measurements as I forget year to year. Don’t throw out the dressing! Just add more cucumbers and onions.

We love this recipe in our house! I generally cut the “sauce” part in half, as we end up tossing at least that much, if not more. We don’t generally like the flavor of celery seed, so I’ll often add dried dill instead (not much, maybe 1/4 to 1/2 t). Very yummy!
Recipie still works if you reduce the sugar!

Just our garden cucumber,2 onions, vinegar,sugar,salt and pepper. I measure nothing,when my partner gives his thumbs up, its finished.
Only 2 people here, so cut it to a little bit less than half. I added about 1 cup water. It was very good.

Well, I tweaked this like I tweak most everything so I can’t rate this on the original recipe! Two cups of sugar seemed overwhelming so I only used one and instead of celery seed I used dill weed. Made this way, it was delicious!
