Fruity Curry Chicken Salad

I adore this basic, easy recipe for potato soup made in a slow cooker. For a little variety, I occasionally add bacon or Cheddar cheese. It has a variety of uses.

Ingredients

  1. 4 skinless, boneless chicken breast halves – cooked and diced
  2. 1 stalk celery, diced
  3. 4 green onions, chopped
  4. 1 Golden Delicious apple – peeled, cored and diced
  5. ⅓ cup golden raisins
  6. ⅓ cup seedless green grapes, halved
  7. ½ cup chopped toasted pecans
  8. ⅛ teaspoon ground black pepper
  9. ½ teaspoon curry powder
  10. ¾ cup light mayonnaise

Instructions

  1. In a large bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together. Serve!

Used only 2 chicken breasts, cut the mayo to 1/2 cup, added extra celery and grapes. Left other ingredients as called for. Delicious salad.

I make mine w yellow curry and apples and celery pepper mayo lil Mustard but I’ll add nuts! I also add turmeric and flax seed. I use Romain leaf as wrap or flout tortilla Your recipe looks delish!!

This is a fantastic recipe! The only change I made was to not add raisins for person preference and I added just a dash of dijon mustard. I thought it added a some depth to the flavor. Also I used a rotisserie chicken from the grocery store. Saved a lot of time and effort and tasted great.

This was the best Chicken Salad I’ve ever made. I cubed some chicken breast that I had previously steamed and basically just followed the recipe. The hint of Curry put it over the top good! I decided to not add the apple, but I can’t imagine it being any better. Especially the next day when the flavors have had time to compliment one another.

Delicious as is, but I liked it even more after substituting craisins (dried cranberries) for the raisins and doubling the amount of curry powder. It’s true it gets even better the next day.

I didn’t have grapes, so I just omitted them, and I used red onion as I didn’t have the green onion. But……….OMG the next day this recipe was was best ever! I tasted it as I was making to see what else it might need, but the day it was like a whole new recipe! Let it sit for at least overnight!

I love this recipe, and have gotten a lot of love from other people about it. I have never done the chicken as they describe, I will get a rotisserie chicken or tinned chicken. I am also typically generous when it comes to the fruit and nuts. I quarter the grapes because I found grape halves to be too big. I have only used Granny Smith or Pink Lady apples cause they are my preference when it comes to apples in general. When I first made this I found that it was difficult to get the curry powder to be evenly distributed, and that it seemed to glom on to the apple slices. I developed the 4 mixing method to fix this. I cut up all the things and put in a bowl and stir it until mixed. Then I add the curry powder and pepper and mix. Then add chicken and mix. Then I add the mayo and mix for the last time.

A great flexible recipe. I marinaded & grilled the chicken, skipped the grapes & added dried unsweetened cherries, used sweet/spicy pecans from Trader Joe’s for the toasted pecans, and used a honey crisp apple. My family loved it. The salad was even tastier the next day.

I use rotisserie chicken and make it exactly as written. It is perfection in pita halves, or sandwiches, and pretty easy to throw together. All the flavors, textures, sweetness, & crunch blend together beautifully for a tasty can’t-miss chicken salad. I like to dry all fruits & veggies after washing to prevent the salad from being too “wet”.
