For our roughly once a month (seafood Sunday) lobster dinners, I made this fresh corn salad to go with it. I wanted to prepare a side dish that wasn’t a typical potato or corn on the cob. Now, the whole family enjoys it! Fits perfectly with grilled steak or tuna steak, too. A pleasant surprise is the flavor combination of salty with the feta and sweet with the corn.

Ingredients
- 3 ears sweet corn
- 1 ½ pints cherry tomatoes, halved lengthwise
- 1 bunch green onions, diced
- 2 tablespoons minced fresh cilantro
- 2 tablespoons olive oil
- 2 tablespoons aged white wine vinegar
- salt and ground black pepper to taste
- 1 (4 ounce) package feta cheese, cubed
Instructions
- Bring a large pot of water to a boil. Add corn and cook for 10 minutes. Drain and cool under running water so it’s easier to handle.
- Cut corn off the cobs into a large bowl. Add tomatoes, green onions, cilantro, olive oil, vinegar, salt, and pepper and mix together. Add feta cheese just before serving.
- Yasou Greek Dressing can be used instead of the olive oil and vinegar.
- Crumbled feta can work just as well, I just prefer to have the larger cubed pieces.
- You can marinate the salad prior to adding feta cheese in the refrigerator until you’re ready to serve.

We loved it! We both went back for seconds! I added about 1/4 of a fresh red bell pepper. I also added a little garluc powder to the dressing. I had crumbled feta so that is what used. It is a keeper!
This was really good! I did use less tomatoes and green onion than called for for a better balance of flavors. I loved the salty feta with the sweet corn. Next time I will mix up a bit more dressing as it was a little dry. I’m also going to grill the corn instead of boiling it for added flavor. This is a delicious summer side dish. It does make 4 big portions.

Very good. I had some things on hand and added 1/2 diced cucumber, 1/2 diced red bell pepper. Didn’t have the white wine vinegar and used 1 T. lemon juice + 2 T. apple cider vinegar. Didn’t have cherry tomatoes and used 1 large red and 1 yellow heirloom tomatoes diced. It probably added more liquid to the salad but we both enjoyed it.
