Ingredients

  1. 1 cup water
  2. 2 pounds red potatoes, cut into 1-inch chunks
  3. 2 eggs
  4. ⅓ cup mayonnaise
  5. 2 teaspoons red wine vinegar
  6. 1 teaspoon Dijon mustard
  7. 1 celery stalk, diced
  8. ½ teaspoon salt
  9. ¼ teaspoon ground black pepper
  10. 1 tablespoon chopped fresh chives

Instructions

  1. Pour water in a multi-functional pressure cooker (such as Instant Pot). Place steamer; add potatoes and eggs. Close and lock the lid. Select high pressure according to manufacturer’s instructions and set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid.
  3. Place potatoes in a large bowl. Peel eggs, remove egg yolks, and chop egg whites. Mash yolks and whisk with mayonnaise, vinegar, and mustard in a bowl until well combined to form the dressing.
  4. Combine chopped egg whites, potatoes, and celery; pour in dressing and stir until evenly coated. Season with salt and pepper and sprinkle with chives. Refrigerate before serving.

Needed much more mustard. I boiled the potatoes and eggs the old fashioned way; I added a LOT more mustard than the recipe called for and omitted the celery. Next time, I’ll likely add sweet pickles. Good recipe overall, and much easier than I thought – first time making ANY potato salad!

Followed the IP directions for cooking potatoes and eggs except I only cooked them for 3 minutes. Also, added 2 teaspoons of sugar and 1/2 white onion (diced) to dressing.

I made this recipe as written. It was just ok. I wound up throwing in some additional spices as well as green onions. What I really did like, was the cooking method. I used my pressure cooker, and it was super easy. Usually I overcook the potatoes, but the were the perfect texture. Eggs were also done.
