Danielle’s Fattoush Salad

If you prefer fantastic hot pizza without all the calories, or if you are a vegetarian, they are to die for. Because they are so delicious and simple to cook for family or visitors, I decided to include these prefabricated foods to my recipe collection. Topped with cheese, tomato, herbs, black olives, and balsamic vinaigrette, portobello mushrooms.

Ingredients

  1. 2 tablespoons grapeseed oil
  2. 2 pita bread rounds, cut into 1-inch pieces
  3. 2 cups shredded romaine lettuce
  4. 1 green bell pepper, cut into bite-size pieces
  5. 1 large roma tomato, cut into bite-size pieces
  6. ½ red onion, sliced
  7. ½ English cucumber, cut into bite-size pieces
  8. ¼ cup chopped feta cheese
  9. 2 tablespoons chopped fresh mint
  10. 1 tablespoon chopped fresh flat-leaf parsley
  11. ¼ cup extra-virgin olive oil, or more to taste
  12. 1 lemon, juiced, or more to taste
  13. 1 clove garlic, grated
  14. ½ teaspoon Greek seasoning
  15. ½ teaspoon ground sumac (Optional)
  16. salt and ground black pepper to taste

Instructions

  1. Heat grapeseed oil in a large skillet over medium-low heat. Cook and stir pita bread pieces in hot oil until golden brown, 2 to 3 minutes. Transfer bread pieces to a paper-towel lined plate.
  2. Stir romaine lettuce, tomato, red onion, cucumber, feta cheese, mint, and parsley together in a large bowl.
  3. Whisk olive oil, lemon juice, garlic, Greek seasoning, sumac, salt, and black pepper together in a bowl until completely combined. Pour olive oil mixture and pita bread pieces into lettuce mixture; toss to coat.

Great dressing and salad contents! However if you’re going to eat this salad with a fork don’t shred the lettuce. The leftovers will be inside a slice of pita bread!

LOVED IT!!!!! I am a lover of Lebanese-style salads (after all, I am part Lebanese, lol), and this was no exception. Really great combo of flavors and the dressing was just right, IMO. I did use the optional ground sumac. I did not have Greek seasoning on hand, so I just used Italian seasoning (I know it’s NOT the same), but it worked well. Also, I didn’t measure any of the salad ingredients, just eyeballed everything. This was a huge hit tonight and a definite keeper~YUM! Thanks for sharing. 🙂
