Ingredients

  1. 4 large cucumbers, sliced
  2. 1 onion, thinly sliced
  3. 1 tablespoon dried dill weed
  4. 1 cup white sugar
  5. ½ cup white vinegar
  6. ½ cup water
  7. 1 teaspoon salt (Optional)

Instructions

  1. Combine cucumbers, onion, and dill in a large serving bowl.
  2. Combine sugar, vinegar, water, and salt in a medium bowl; stir until sugar dissolves.
  3. Pour vinegar mixture over cucumber mixture. Cover the bowl and refrigerate for at least 2 hours before serving
  4. The longer this dish marinates in the refrigerator, the tastier it is.

Very delicious and crisp! I used raw sugar instead of white sugar and added a few herb seasoning with chives and shallots. Also used fresh dill instead of dried.

I’m in love with this recipe! I tweaked it slightly. I used 2 cucumbers, 1/2 white onion and reduced the sugar to 1/2 cup based on others comments of 1 cup being to much. The dill, vinegar and water amounts I kept the same as the recipe stated. I sprinkled salt and pepper as well as onion salt and garlic salt on my cukes and onions before adding the liquid mixture. I also added a few cherry tomatoes for color.

Love this recipe . . . and I’ve never really been a fan of cucumbers! But, I’m a convert now and this recipe is perfect as a side dish. The only thing I do differently is replace the sugar with Stevia to bring down the calories.

I prepared the recipe for a potluck and everyone loved it! I had reviewed the comments of others and made the following modifications: sprinkled salt on the sliced cucumbers and let sit for 20 mins, didn’t add water as plenty of liquid seeped from the cucumbers, used fresh dill, and cut sugar quantity’s in half.

This was WAY too sweet . I listened to other reviewers and cut the sugar in half. Even then it was too sweet and I had to add more vinegar and water. I like the simplicity of the recipe. With adjustments I think it is a keeper.

This was a last minute thought/dish so I served it approx 2 hrs after making and it was still a hit. Better the next day after marinated overnight. Followed the recipe except used celery seed instead of dill (because that’s what I had). Keeper. Thank you for sharing.
