A meatloaf family favorite is this cheesy turkey variation.

Ingredients

  1. 4 cucumbers, thinly sliced
  2. 1 small white onion, thinly sliced
  3. 1 cup white vinegar
  4. ¾ cup white sugar
  5. ½ cup water
  6. 1 tablespoon dried dill, or to taste

Instructions

  1. Toss sliced cucumbers and onion together in a large bowl. Set aside.
  2. Combine vinegar, sugar, and water in a saucepan over medium-high heat; bring to a boil; pour over cucumbers and onions in the bowl. Stir in dill. Cover and let marinate in the refrigerator for at least 1 hour before serving.
  3. For a pretty salad, peel only half of each cucumber, leaving strips of skin on each.

I followed the recipe exactly. The dressing/solution is spot on. I didn’t like the resulting texture after pouring it hot over the cukes and onion. It kind of par cooked the veggies and they were not as crispy as I’d like. Family loved them though and I was asked for the recipe a few times that night. If you want then w little less “cooked” ok would cool the solution to room temp before adding to the cukes and onion.

This salad is like eating pickles right out of the jar! Delicious!! I added green pepper strips and ground black pepper. I substituted the sugar for 1/3 cup monk fruit sweetener. I also used my veggeti pro on the ribbon cut setting for the cucumbers and did not peel them.

I’ve made this many times. I was surprised that the recipe didn’t tell us to salt the cucumbers first after you’ve sliced them. Because if you don’t, the cucumbers have way too much liquid in salad once it’s made. I use kosher salt to brine the cucumbers once I slice them. I let it sit for about an hour, then drain them. Add the onions last with a small amount of dill. I have a lot of cucumbers in my garden. This is a way of using my surplus.

Very good. I did not boil anything just poured it over cukes. Also I use WAY lest sugar. Is that a miss print? 3/4 of a CUP? I used 1.5 Tbsp. Still a nice easy recipe when your garden is producing a lot of cucumbers

I make this cucumber salad quite often because I love it so much! I used to make a green salad whenever we had people over for a bbq or dinner but found that no one ate it. I switched to just this cucumber salad and it’s worked out well. If I want to add some color I cut grape tomatoes in half or quarters and toss them in with the cucumber. I eat it as is, but I’ve had guests use it on their burgers or hotdogs, but no matter what, it’s a big hit. I make it for myself all the time!

I used English cucumbers and I found the liquid was only good for 2 cukes, not 4. That’s my only criticism. I think this is a super easy, and super delicious dish. Now I just estimate my amounts, but I think you need to at least try it as written to give a fair review.

I got rave reviews when I took this to my women’s group. I read the reviews and took a little of each. I did 2 normal cucumbers and 2 English cucumbers with some white onion, 2 cups white vinegar, 1 cup water, 3/4 cup sugar. I forgot to add the dill to the boiling water so I put the fresh dill in the bowl after I poured the hot mixture over the cucumbers. Then I put more fresh dill on top when I served. I made it about noon and kept it in the refrigerator until I served around 6pm that day. Great for people gluten free I was told.

Yes! This is the cucumber salad from my childhood and I love it! The cukes here are usually big, so I counted them as 2 cukes and the ratio was spot on.

This salad is very refreshing. Sometimes I modify it with other summer veggies & items I have on hand. Such as thinly sliced turnip’s, olives, cheese, peppers, grape tomato’s, etc. I can probably add sunflower seeds when plating too!

Adding a review so I can keep some notes for myself!… this is great with red onions… I have made it with white vinegar, apple cider vinegar, rice vinegar, and even a cranberry pear basalmic vinegar… or a combo of these, based on what I had on hand… I used powdered stevia in an amount that was the label equivalent for sugar, in order to make this “meal plan” friendly. I used less dill than it calls for, but close to it.

I followed recipe but didn’t boil liquids as I feared it would take the crispness away from cukes. I like them spicy so added a small amount of chili paste…WOW!
