- 1 ½ cups diced apple
- 1 cup cucumber slices
- ⅓ cup raspberry vinaigrette

- Mix diced apple and cucumber slices together in a small bowl. Drizzle vinaigrette over the apple mixture and toss to coat.

I added the sweet onion as Steve suggested, I really liked it, it added a little bit of savory. I’m not a real sweets person, so the onion added just the right touch. Will definitely make this again.
I made this as a side dish to steak with samosas and chimichurri sauce. This salad tastes amazing! It’s very cool and refreshing and a great complement to heavier dishes…perfect for the summer!

I made this tonight, for our salad with dinner, and it was wonderful! My boyfriend and I are huge salad people and we were both thrilled to have found a new recipe that is so easy to make and tastes so fresh and delicious. I never would have thought to put apples and cucumbers together but they really compliment each other. A great summertime recipe. This easy to make recipe is spot on for those summer picnics. The raspberry vinaigrette adds the perfect touch. I recommend to only add the raspberry vinaigrette when ready to eat the salad.
