Crunchy Ramen Broccoli Slaw

In my grandmother’s salon, the recipe for this broccoli slaw was passed through for many years. She brought it to each church dinner. Every Thanksgiving and Christmas, it was served.

Ingredients

  1. ¼ cup butter
  2. 2 (3 ounce) packages Oriental-flavor ramen noodle soup, seasoning packet reserved
  3. ½ cup slivered almonds
  4. ¼ cup sesame seeds
  5. 1 (16 ounce) package broccoli coleslaw mix
  6. ½ cup chopped green onion
  7. ½ cup salad oil
  8. ½ cup white sugar
  9. ¼ cup apple cider vinegar
  10. 2 tablespoons soy sauce

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Melt butter in a microwave-safe bowl in the microwave. Crush ramen noodles into small pieces; stir crushed noodles, almonds, and sesame seeds into melted butter. Spread mixture onto a baking sheet.
  3. Bake in the preheated oven until golden brown and crunchy, 8 to 10 minutes; allow to cool completely.
  4. Toss together coleslaw mix and green onion in a large serving bowl.
  5. Make dressing: Whisk together oil, sugar, vinegar, soy sauce, and reserved seasoning packets in a separate bowl until well combined.
  6. Stir cooled noodle mixture into dressing. Pour dressing over coleslaw-onion mixture; toss to coat.

I use toasted sesame oil, seasoned rice vinegar, Swerve for the sugar (sugar free), lemon pepper, garlic powder, onion powder, a little hot chili oil..I don’t toast the Ramen and don’t see the need for butter? Been making this for decades..oh, and pumpkin seeds if I have them

My favorite salad for family and friend get togethers. I used the chicken packet and extra soy sauce to replace the discontinued oriental packet. Definitely need to let it sit after adding the dressing in the icebox for several hours to develop the flavor. I add the ramen and nuts or pepitos after browning them in a skillet with butter. Mix in to salad just before serving. Optional addition is dried cranberries.

Sadly the Oriental-flavor ramen noodle soup has been discontinued so we had to substitute Chinese Five Spice for the seasoning packet. Followed the rest of the recipe and we did not like it. Also did not like the noodles roasted in butter. Nor did we like the crunch of the noodles. We won’t be making this again. But thanks anyway.

Made only a few adjustments based on other reviews. Heated crunchies on stovetop rather than oven and used half sesame oil and half EVOO instead of vegetable oil. Absolutely delicious!

We really enjoyed this tonight for dinner with a chicken breast on top. I incorporated several suggestions from other reviewers and made the following changes: used a combo of red wine vinegar, rice wine vinegar and apple cider vinegars, also combined olive oil, salad oil and sesame oil, added minced garlic and fresh ginger (lightly sauteed) to the broccoli slaw and green onion combination, used sesame seeds and sunflower seeds along with the sliced almonds, used brown sugar instead of white, used only 1 packet of ramen noodles and had much left over. I didn’t mix the ramen noodle mixture with the dressing, as I was afraid of it making the crispy, crunchy items mushy. Just sprinkled some into the broccoli mixture and on top of the chicken breast. Many additions, I know, but it resulted in a wonderful flavored salad and dressing. Drizzled some extra dressing over the chicken which I placed on top of this delicious salad. What a fresh and flavorful meal on a hot Summer night! Oh, one more thing, I didn’t use butter, but used sesame oil instead with a small pat of butter to cook the crispy, crunchy items. Then cooked my chicken breast in a bit of sesame oil to continue the theme. Yum!

I make this salad frequently. It is easy and delicious! It is ok to add the ramen noodles when you serve it if there are 4 or more eating. If you live by yourself and have leftovers just add the noodles as you eat the salad. It will keep for 2 or 3. That way the ramen noodles will stay crisp.

I made mine exactly as the recipe says the first time. While it really was delicious, I didn’t see any reason to add butter when toasting the ramen, almonds and sesame seeds. So now I don’t, and it is my go to recipe for any summertime cookout.

Made this recipe double as a holiday side and there were no leftovers. Four teenagers helped devour it and hubby said definitely to add to the list to make again! Easy to get the bagged broccoli slaw at the grocery too. I subbed sunflower seeds for the sesame since we had an allergy in the family and they were super! Also did not have the apple cider vinegar but did have some cherry balsamic vinegar. I think any fruity vinegar would work to magnify the sweet and sour flavor you’re going for and the crunch of the raw broccoli, nuts, and noodles was outstanding. Will make this one over and over.
