Creamy Cauliflower Egg Salad

Ingredients

  1. 1 large head cauliflower, cut into small chunks
  2. 4 hard-cooked eggs, or more to taste – chopped
  3. 1 cup creamy salad dressing (such as Miracle Whip®)
  4. 2 stalks celery, diced
  5. 4 green onions, chopped
  6. ¼ cup sour cream
  7. 2 tablespoons apple cider vinegar
  8. 1 teaspoon white sugar
  9. salt and ground black pepper to taste

Instructions

  1. Place cauliflower into a microwave-safe bowl, cover, and cook in microwave oven until tender, about 7 minutes. Uncover and cool for 5 minutes.
  2. Stir eggs, creamy salad dressing, celery, green onions, sour cream, apple cider vinegar, sugar, salt, and black pepper in a bowl until thoroughly combined. Mix cauliflower into dressing. Chill at least 1 hour before serving.

Absolutely delicious!!!! I’m not a fan of cauliflower, but, this salad is a family pleaser. I’ve made it twice this week. 5 people with different tastes they all loved it.

Made less as I only had a third of a head of cauliflower. Went half salad dressing and half plain yogurt, plus sour cream. Used diced white onion. Also gave a good squirt of mustard. Outstanding! Will make again for sure. But will add bacon , cheese, and maybe shredded carrot to try to make it loaded.

I bought pre-cut cauliflower and made half the recipe, only leaving out the celery – I did not miss it a bit. The salad was delicious! I hope to make it again.

Delicious and much easier and healthier than potato salad. I added 1 tablespoon Dijon mustard and used garlic salt instead of regular salt. Turned out great! I will definitely make it again.

I had a little fresh cauliflower in the fridge, so I decided to give this recipe a try for lunch today. I halved the recipe, used reduced-fat/lightened ingredients where possible, and steamed the cauliflower for about 2-1/2 minutes in the microwave. The addition of the sour cream and that little bit of sugar really make this taste different. Honestly, I couldn’t tell I was even eating cauliflower, it just blended so well with the chopped eggs and the texture was about the same. This was a pleasant surprise, and I definitely will make this again.
