Corn and Kale Salad

Ingredients

  1. 4 ears sweet corn, husked
  2. 2 bunches kale – stems removed and discarded, leaves torn into bite-size pieces
  3. 1 teaspoon salt, or more to taste
  4. 1 large red bell pepper, chopped
  5. ¼ cup pineapple juice
  6. ¼ cup olive oil
  7. 2 tablespoons salsa
  8. 2 teaspoons Cajun seasoning, or to taste
  9. 1 teaspoon garlic powder
  10. 1 teaspoon onion powder
  11. salt, to taste

Instructions

  1. Bring a large pot of water to a boil. Add corn to boiling water and turn off heat. Let corn soak in hot water for 5 minutes. Remove the corn, reserving the cooking water in the pot. Set corn aside to cool before slicing kernels from the cobs into a mixing bowl.
  2. Return the pot of water to a boil; add kale and 1 teaspoon salt. Boil kale until bright green and tender, about 5 minutes; drain and set kale aside to cool. Once cool enough to handle, squeeze as much liquid from the kale as you can. Separate leaves and add to bowl with corn kernels.
  3. Stir red bell pepper, pineapple juice, olive oil, salsa, Cajun seasoning, garlic powder, and onion powder into the corn and kale.

I was a little skeptical of the odd mix of ingredients, but decided to try it given the good reviews. Sad to say it wasn’t my favorite. Given the bold flavors that went into the dressing, the overall salad wasn’t that flavorful. It was missing something. I couldn’t taste the pineapple juice at all, so I’d just skip that next time and replace with vinegar to give the salad the acidic flavor its missing. This also makes WAY more than 6 servings; I’d say at least 8-10 sides. I also didn’t care for the little clumps of cooked kale. After squeezing the liquid from the kale, it became a pain to try and separate all the leaves. I would have preferred thinly sliced ribbons of raw kale, massaged to soften before putting into the salad.

No one in my house was a fan of this. I usually eat kale as is, so cooking/steaming it was new. We all found that it lacked taste and so it sat in the fridge… I won’t be making this recipe again.

The only ingredient I didn’t have on hand was the peppers. The flavors are good and will definitely make it again!

I halved the veggie portion and kept the dressing portion the same (in case more was needed) for my husband and me. I thought it was quite good, my husband loves this! He just got done saying his fourth “godDANG!” since he started eating dinner. Will make again. Oops, also added a wee bit of red onion and minced jalapeño.

I was super happy w/ the recipe. I put the kale in an ice bath so it was served as a cold salad. I think I’ve found my new dip for vegetables, the dressing is sper yummy. Can’t wait to have the leftovers tomorrow.

Hubby and I thought it was okay, but we didn’t love it. Our babysitter really liked it, though. I did substitute OJ for pineapple juice and used a little fresh onion since I was out of onion powder. If I make it again (doubtful), I’ll try doing it as a warm dish like whole planet mom suggested.

I have never used Kale before and decided to try something different. I also substituted the pineapple juice for orange juice and used frozen corn to save on time and it worked out great! My family loved it and I will definitely make this again.

This was awesum! Since the corn and kale had to cooked- i made it a warm dish- simmered onion, garlic, and red pepper while kale cooked. Added oj, homemade salsa, and frozen corn. Simmered few minutes and added the kale. Salted to taste and it was a hit!
