Cooked Mushroom Salad

You can serve this mushroom salad warm or cold. Because button mushrooms are widely accessible all year long, I typically use them.

Ingredients

  1. 1 tablespoon olive oil
  2. 2 (16 ounce) packages sliced fresh mushrooms
  3. 2 garlic cloves, pressed
  4. salt and freshly ground black pepper to taste
  5. 1 splash dry white wine
  6. 2 tablespoons chopped fresh dill
  7. 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat. Cook and stir mushrooms in hot oil until soft and juices have reduced, 5 to 10 minutes.
  2. Stir garlic into mushrooms, season with salt and pepper, and cook for 2 minutes. Add white wine and cook for 1 minute. Stir in dill and parsley.

I make this all the time but I’ve never added dill. Will definitely try it. And I’ve never called it a salad.
