Chopped Turkey Salad with Grapes

Ingredients

  1. 2 cups cooked turkey, cut into bite-sized chunks, or more to taste
  2. ⅓ cup mayonnaise
  3. 1 tablespoon mayonnaise
  4. 3 tablespoons Dijon mustard
  5. 2 tablespoons red wine vinegar
  6. 1 medium head Romaine lettuce, cut into bite-sized pieces
  7. 1 cup mixed salad greens
  8. 3 stalks celery, sliced
  9. 1 small red onion, finely sliced
  10. ¾ cup halved seedless red grapes
  11. 6 tablespoons olive oil
  12. 4 tablespoons red wine vinegar
  13. 1 pinch white sugar
  14. salt and ground black pepper to taste
  15. ½ cup shelled salted peanuts, or more to taste

Instructions

  1. Mix cooked turkey, 1/3 cup plus 1 tablespoon mayonnaise, mustard, and red wine vinegar together in a bowl and set aside.
  2. Mix Romaine lettuce, salad greens, celery, red onion, grapes, olive oil, vinegar, sugar, salt, and pepper together in a large pretty serving bowl and toss to blend.
  3. Make a depression in the center of the lettuce mixture in the serving bowl. Mound the turkey mixture in the center and sprinkle with peanuts.
  4. You can use cooked chicken in place of turkey, if you prefer. Slivered almonds can be used instead of peanuts.

This is a really good salad! Since the author of the recipe suggested substituting almonds for peanuts, that’s what I did (I used chopped almonds, not slivered though). I also just used a pre-mixed bag of green salad that had some romaine and spinach in it. I really enjoyed how this was not overly ‘mayonnaise-y’ as some salads like this tend to be–it was perfectly creamy without being overwhelming. The only thing I’d do differently next time is to add a touch of dill to the dressing, just because I think it would compliment it really well (and I really like dill lol). Will definitely make this again! Thank you for the recipe!
