Chicken Curry Salad

It was around one in the morning when I suddenly developed a taste for chicken curry. It works great with crackers and is incredibly simple to make.

Ingredients

  1. ½ cup mayonnaise
  2. 1 teaspoon curry powder
  3. salt and pepper to taste
  4. ¼ teaspoon chili oil
  5. 1 (10 ounce) can chunk chicken, drained

Instructions

  1. In a medium bowl, stir together the mayonnaise, curry powder, salt, pepper, and chili oil. Mix in the chunk chicken until well blended. Refrigerate until serving.

Had no chili oil, will have to try the recipe with that. I doubled everything, added chopped celery and onion, and added it all to cooked pasta shells. A wonderful meal.

I didn’t use canned chicken, I par boiled & shredded the chicken; used curry powder, chili powder, turmeric & garlic powder with half mayo/half miracle whip – it was DELICIOUS

This made a yummy lunch with buttery bacon flavored crackers! Chili oil gives it an extra flavor boost. I’d prefer it to have more texture so I added crushed almonds.

Really loved this. Threw in some celery just because it’s not a chicken salad to me without it, onion for the husband and a few dashes of cayenne pepper because I didn’t have chili oil. The hubby chased me down to tell me how much he loved it. Always excited to have an extra poached chicken breast laying around now that I know what to do with it! Agree with the reviewer who said 1/3 cup mayo is perfect.

Honestly I thought this was a little bland. I added in a tablespoon of curry powder and that really brought it to life! I also didn’t have grapes so I used raisins as a substitute.

I used rotisserie chicken and nonfat Greek yogurt and my friends loved it! I also added dried cranberries. This one is definitely on my list of favorites and easy!

Pretty good base recipe. I omitted salt since canned chicken is already salty to me. Also omitted chili oil. I’m sure fresh cooked chicken would make this fit for guests but as it was I appreciated being able to whip it up fast with pantry staples and no cooking. I added some raisins (wish I’d had graped, I would have added split grapes instead). Served it on sandwich rolls with some very crisp lettuce for texture and freshness.

Yummy! I used Miracle Whip instead of mayonnaise, no chili oil, and added 1 tsp chopped dried onion, 1/4 tsp celery seed, a handful of chopped almonds, and a handful of dried cranberries.

The only way I have ever made chicken salad. I do not use canned chicken, though. I also love to add a sweet, tart element (Granny Smith apples, dried cherries, green grapes…). Pretty served on split croissants.

This was very very good, I cooked my own chicken, toasted some walnuts and put some grapes in there, and i didn’t have any chili oil to add but… it was delicious anyway!

I omitted the chilli oil simply because I didn’t have it in the house. I ate these with saltine crackers and glass of milk. very very good if you love curry and it’s not spicy so you can get the kids to try it at least.

Simiplicity is the strong point for this dish! Good on sourdough rounds for a lunch sammy—good straight out of the bowl at O-Dark-Thirty! Had thought about adding halved small grapes for sweet, or a bit of minced scallions for savory! Thanks!

I agree with previous reviews. DO NOT use canned chicken. I doubt I will try this again, but I think if I had used the leftover chicken I had, it would have been better. The sauce would be ok to use for other recipes or to use as a dressing/dip.
