Ingredients
- 1 pound dry penne pasta
- 1 tablespoon butter
- 6 skinless, boneless chicken breast halves – cut into 1 inch cubes
- ½ teaspoon ground black pepper
- ¼ teaspoon salt
- 1 (8 ounce) bottle Caesar salad dressing
- ¼ cup red wine vinegar
- ½ cup grated Parmesan cheese
- 1 head romaine lettuce – rinsed, dried and shredded
- 1 large tomato, chopped
Instructions
- Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
- Melt butter in a large skillet over medium heat. Add chicken, pepper and salt. Cook 10 minutes or until chicken is cooked through. Remove skillet from heat.
- In a bowl, mix together salad dressing, vinegar and cheese. Toss together pasta, chicken, lettuce, and dressing mixture. Place in large serving bowl, and sprinkle with tomato. Garnish with croutons and Parmesan curls, if desired.

Great taste and easy to put together. I used grape tomatoes instead slicing one whole tomato. Also slightly reduced the amount of pasta. VERY NICE SALAD

Was a little unsure about having pasta in a lettuce salad, but this was amazing. If you want to save part for later, don’t mix the chicken and pasta part with the lettuce til just before serving. One thing I did to refresh was to mix the lettuce with a bit of additional caesar dressing and then mixed with the remaining chilled chicken and pasta for leftovers.
Delicious!! Followed recipe except I added chopped garlic. At the end, I mixed everything together except the romaine. I put some romaine in each individual bowl then topped it with the mixture, added tomatoes and fresh grated Parmesan. If you have leftovers, it will keep so much better with the romaine stored separately. Definitely a keeper!
So delicious! The only changes I made was to use gf pasta and a rotisserie chicken. I mix everything together except the lettuce/tomatoes and refrigerate. When it’s time to eat I serve cold and stir in the lettuce and tomatoes. Will make again and again!
Followed the recipe to a T and loved it. It was a huge hit at the family function.

Recipe posters – please include weights for chicken! Breasts come in a wide range of weights. I halved the recipe and used the white meat from a 3.5 pound rotisserie chicken, which came to 13.5 oz. I wanted it cold so made it ahead of time. If I’d served it warm I would have had it over spinach, like other reviewers said.

A great recipe, but eating the warm lettuce is not good. This definitely needs to chill in the fridge before you eat it. Will make again, but chilled next time.

Nice change for a pasta salad. I used bowtie as I did not have penne and added squeeze dried unfrozen spinach.
The family lived it! I’ll add more chicken to it next time tho. You can never have to much chicken. Maybe some bacon too.
I am absolutely obsessed. I’ve had about four bowls full of this and I actually don’t know if I can stop until I’m unconscious. My fiancé and I were vegetarian throughout all of quarantine and are slowly reintroducing poultry and fish. This was the first meat dish I have cooked at home since March and it was excellent! Very simple, but surprisingly delicious. It’s definitely makes more than enough, which is great if you like leftovers. I even cut the amount of chicken in half – though, I did double the veggies. I can see this becoming a staple in our household for gatherings or picnics in the future!
I used Asiago peppercorn dressing and added black olives, it was delicious!

Well when combing the cheese and vinegar it’s a little confusing on much of dressing to add otherwise it was ok
Love this! Since I am gluten intolerant, we use gluten free pasta and omit the croutons. We make this with chicken or salmon and always fresh shaved parmesan. It is a great summer time meal.
