Cauliflower Mock Potato Salad

Pasta with chicken pesto is tasty and simple to make. Serve as a quick dinner with crusty bread and salad. You can adjust how much pesto sauce to use. Even though homemade pesto takes longer to prepare, it will taste better. Enjoy!

Ingredients

  1. 1 large head cauliflower, cut into bite-sized pieces
  2. 6 slices bacon
  3. 2 hard-boiled eggs, diced
  4. ½ cup shredded Cheddar cheese
  5. ⅓ cup mayonnaise
  6. ¼ cup chopped red onion
  7. 1 tablespoon chopped fresh dill
  8. 1 tablespoon prepared yellow mustard
  9. ½ teaspoon salt
  10. ½ teaspoon ground black pepper

Instructions

  1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender-crisp, 3 to 5 minutes.
  2. Place cauliflower into a large mixing bowl and place in the refrigerator to chill for 2 hours.
  3. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble.
  4. Add bacon, eggs, Cheddar cheese, mayonnaise, onion, dill, mustard, salt, and pepper to the bowl of cauliflower and stir well to combine. Serve immediately.

I was torn between a 3 and 4 rating. I love that it’s low carb and somewhat “healthier” than potato salad. I did not enjoy the dill in this, so I would leave it out next time. I would suggest mixing the mayo and mustard together before adding to prevent any pockets of mustard. I cut back a bit on the red onion and that was perfect for me. I enjoyed eating it the day I made it, but didn’t end up finishing the leftovers. The description says “loaded with bacon, pickles, and dill…” yet there are no pickles in the recipe. I would prefer it without the pickles anyway.
