This is something my husband and I cook at least once a week, maybe more. It consists of the traditional Caprese salad topped with several delicious extras.

Ingredients
- 2 plum tomatoes, thickly sliced
- 3 (4 ounce) balls buffalo mozzarella, thickly sliced
- 1 avocado, cubed
- ½ English cucumber, peeled and sliced
- ½ cup green olives
- ½ cup canned artichoke hearts, drained and chopped
- 2 tablespoons torn fresh basil leaves
- salt and ground black pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
Instructions
- Divide tomatoes, mozzarella, avocado, cucumber, green olives, artichoke hearts, and basil between two serving plates, layering them in that order. Season with salt and pepper.
- Drizzle olive oil and balsamic vinegar over layers.

I had this with some crusted chicken, and this was the favored part of the meal. Everything came together so well. I skipped the artichokes, though I love them; and I had accidentally finished my fresh basil in another recipe, so used dried. Also, would have loved balsamic vinegar, but had to substitute red wine vinegar. Even with the slight changes, this was a keeper – I plan to make it once per month. So attractive, too!
Absolutely delish! I didn’t have any fresh basil on hand, but with all the other flavors, I didn’t miss it. My artichokes were the marinated variety, so that probably helped. It came together easily, but felt fancy. I would definitely serve this to guests.
This was excellent! I loved all of the extras that went into this. The one flavor I didn’t think went together was the green olive and basil. To me they clashed but my husband liked them together so there you have it. I love green olives but for me, black would have worked better in this. You be the judge…
