Brussels Sprout Slaw with Cranberries

  4.7 – 3 reviews  • With Mayo

For a distinctive flavor, make this coleslaw-like dish with shredded Brussels sprouts rather as cabbage.

Prep Time: 15 mins
Total Time: 15 mins
Servings: 12
Yield: 12 servings

Ingredients

  1. 1 pound Brussels sprouts, shredded
  2. 4 carrots, peeled and shredded
  3. 1 cup shredded red cabbage
  4. 1 cup creamy salad dressing (such as Miracle Whip®)
  5. 1 cup mayonnaise
  6. ⅓ cup canola oil
  7. ¼ cup apple cider vinegar
  8. 1 tablespoon celery seed
  9. salt and ground black pepper to taste
  10. 5 ounces dried cranberries

Instructions

  1. Combine Brussels sprouts, carrots, and cabbage in a large bowl. Combine salad dressing, mayonnaise, canola oil, vinegar, celery seed, salt, and pepper in a separate bowl. Pour dressing over vegetables and toss well to combine. Add dried cranberries and toss again.
  2. Plain vegetable oil is fine in place of canola, and white wine vinegar works if you don’t have apple cider vinegar.
  3. I like to use pomegranate dried cranberries. You can also use dried cherries if you prefer.

Enjoyed this. Answer to question above, no Miracle Whip looks like mayo, but has more ingredients like vinegar and sugar. I have used creamy dressings like ranch or blue cheese in place of Miracle Whip, but they are a bit thinner, typically.

Question..” creamy salad dressing such as Miracle Whip” I’ve always thought Miracle Whip is the same thing as mayonnaise but this recipe calls for both. Is there another “creamy salad dressing” that can be used instead of Miracle Whip?

2.18.19 This really does taste like coleslaw, so those brussels sprouts haters out there will never know that they’re in there. I love the little punch of sweetness and texture you get from the dried cranberries, only wish the slaw had a little better eye appeal (just a personal comment that may not be an issue to anybody else). But putting that comment aside, it really tasted pretty good. Seemed like an awful lot of mayo and salad dressing, so I did cut that back a little, as well as cutting back the oil a bit, too. Thanks for sharing your recipe.
