Pizza crust made of eggplant is a fantastic substitute. I make them on average once a week because I have so much eggplant in my yard! Get your kids to eat their vegetables in a fun way. I advise include peppers, mushrooms, and pepperoni.

Ingredients

  1. 2 cups mayonnaise (such as Hellmann’s®)
  2. 1 cup white sugar
  3. ¼ cup white wine vinegar
  4. 3 dashes hot pepper sauce (such as Frank’s® RedHot), or more to taste
  5. 1 pound bacon
  6. 12 cups fresh broccoli florets, or more to taste
  7. 3 cups fruit and nut trail mix
  8. ½ large red onion, diced into 1/4-inch pieces

Instructions

  1. Mix together mayonnaise, sugar, vinegar, and hot sauce in a medium bowl until smooth. Set aside to allow sugar to dissolve into dressing.
  2. Meanwhile, cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool enough to handle, about 10 minutes. Crumble.
  3. Combine crumbled bacon, broccoli, trail mix, and red onion in a large serving bowl. Add dressing and toss thoroughly.
  4. You should use about 4 large heads of broccoli for this salad. You can freeze the stalks to use in soups and stocks.
  5. You can use whatever combination of dried fruit and nuts you like instead of trail mix.
