Broccoli and Cauliflower Salad

This is a fantastic technique to add flavor to a dish that is otherwise somewhat plain. Even the pickiest eaters will appreciate the excellent flavor that pancetta gives. Additionally, those of you following low-carb diets will love this meal.

Ingredients

  1. 1 pound bacon
  2. 2 cups mayonnaise
  3. ⅓ cup grated Parmesan cheese
  4. ¼ cup white sugar
  5. ½ teaspoon dried basil
  6. 4 cups broccoli florets
  7. 4 cups cauliflower florets
  8. 1 large red onion, thinly sliced
  9. 1 large head lettuce, cut into bite-size pieces
  10. 2 cups seasoned croutons
  11. 1 cup sliced water chestnuts

Instructions

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  2. Whisk mayonnaise, Parmesan cheese, sugar, and basil together in a large bowl until smooth. Add broccoli, cauliflower, and red onion to mayonnaise mixture; toss to coat. Refrigerate salad until chilled and flavors have blended, 3 hours to overnight.
  3. Crumble bacon. Mix bacon, lettuce, croutons, and water chestnuts into salad.

I was looking for a recipe to use up some broccoli and cauliflower when I came across this recipe. I subbed Miracle Whip for mayo cause I didn’t have mayo on hand. Loved this salad, will definitely make it again. It paired nicely with a vegetable quiche I made.

Really good! I added a little extra black pepper and seasonings. Didn’t have time to let it sit but good none the less.

Loved how simple this recipe is to put together. The dried basil in the dressing was new to me. I had a small portion of cauliflower and broccoli left, so I adjusted the other ingredients. Because I knew we would have leftovers, I added the croutons to the individual salads before serving. By doing so, the salad was still fresh the next day and additional croutons were added. I love how much this taste like 24-hr layered lettuce salad, but made and eaten the same day. I will definitely be using this recipe again.
