Ingredients
- 8 slices bacon
- 2 heads fresh broccoli, chopped
- 1 ½ cups sharp Cheddar cheese, shredded
- ½ large red onion, chopped
- ⅔ cup mayonnaise
- ¼ cup red wine vinegar
- ⅛ cup white sugar
- 2 teaspoons ground black pepper
- 1 teaspoon salt
- 1 teaspoon fresh lemon juice
Instructions
- Place bacon in a large, deep skillet. Cook over medium-high heat until crisp and evenly browned, 8-10 minutes. Transfer to a paper towel-lined plate and crumble when cool enough to handle.
- Combine bacon, broccoli, cheese, and onion in a large bowl.
- Whisk mayonnaise, red wine vinegar, sugar, pepper, salt, and lemon juice together in a small bowl; pour over salad and toss to combine. Cover and refrigerate until ready to serve.

I put in half the pepper because of a suggestion in the reviews and it was still a little too peppery. I put in half the sugar and maybe that was what I was missing. I was looking for a different flavor and didn’t find it in this dressing.

Raw broccoli doesn’t digest well for my son, so I SLIGHTLY steamed this. I added only a touch of pepper, salt only in the water steaming the broccoli no bacon[veggie daughter] or red wine vinegar and used fresh squeezed lemon juice, with zest. Next time I’ll mix Mayo and yogurt. In any event, this was a hit at the dinner table…

I’ve been making this for years for holidays and parties. It’s a good recipe that you can prep/make ahead. I just add the bacon and cheese the day of. We also like it with half broccoli and half cauliflower.

I make this often for holiday meals. It is a good veggie side dish that doesn’t need to be cooked. My son loves it. If I have them, I add dried cranberries as they are a nice pop of bright flavour.

I used organic plain Greek yogurt and cut the bacon in half, and it was still delicious.
