My aunt Jen made a great summer salad with mango and no dressing at all! Your pals will gush over it!

Ingredients

  1. 2 (15 ounce) cans black beans, drained and rinsed, or more to taste
  2. 2 avocados – peeled, pitted, and cubed
  3. 2 yellow mango – peeled, pitted, and cubed
  4. 2 tomatoes, chopped, or more to taste
  5. ½ red onion, chopped
  6. ¼ cup chopped fresh cilantro, or to taste
  7. 2 lemons, juiced
  8. salt and ground black pepper to taste

Instructions

  1. Combine black beans, avocados, mango, tomatoes, red onion, and cilantro in a large bowl. Pour lemon juice on top and season with salt and pepper. Mix until well combined.

This is so simple and delicious. I’ve tried it with the other kind of mangoes (green?) and they are too sweet. Yellow mangoes are the way to go. It’s a nice fresh summer bean salad.
