The turkey on Thanksgiving day goes great with this cream cheese corn recipe.

Ingredients

  1. 3 ½ cups chicken broth
  2. 2 cups quinoa
  3. 1 cup halved grape tomatoes
  4. ¾ cup chopped fresh parsley
  5. ½ cup sliced pitted kalamata olives
  6. ½ cup minced red onion
  7. 4 ounces chopped feta cheese, or more to taste
  8. 3 tablespoons olive oil
  9. 3 tablespoons red wine vinegar
  10. 2 cloves garlic, minced
  11. 1 lemon, halved
  12. salt and ground black pepper to taste

Instructions

  1. Bring broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Transfer quinoa to a large bowl and set aside to cool, about 10 minutes.
  2. Mix tomatoes, parsley, kalamata olives, onion, feta cheese, olive oil, vinegar, and garlic into quinoa. Squeeze lemon juice over quinoa salad, season with salt and pepper, and toss to coat. Chill in refrigerator, 1 to 4 hours.

Made recipe as directed with regard to amount of quinoa, broth and dressing mixture. I add edamame, English cucumber, and black olives instead of Kalamata (preference of people I am feeding). It is a summertime favorite.

This is the first time I ever tried quinoa. I thought it was pretty good. Plus, I could pick little doo-dads out of the garden to mix in with it, like chives, parsley or sweet basil, cherry tomatoes, and spinach leaves. I tried several samples to see which way tasted best. The bed of spinach leaves, quinoa mixed with chives and cheese, and an egg over easy on the top was my favorite. No toast needed.

I love this recipe! Made it 4 times now and have enjoyed it so much. Family and friends ask for the recipe. The kids don’t appreciate it, but they are also very picky eaters. The only thing I add is fresh cucumber to give it a little crunch. Make it your own. You won’t be disappointed.

Quick and simple. Loved this recipie. I rinse my quinoa before cooking. Next time I’ll add only 2 1/2 cups of broth due to the extra water from rinsing. No need to add extra salt as the olives and feta bring enough salt to the recipe. Will make again.

I added more veg to balance out the large amount of quinoa. chopped cucumber and chopped yellow and orange pepper. Teenagers did not like it, adults did.

So good – It never lasts long! I often cut back a little on the amount of quinoa (or you could up the other ingredients) as I like to have more of the goodies/veggies. This salad is a staple at my house.

Definitely cut the amount of grain in half. I added more lemon juice for flavor and added chopped cucumber. Very good and refreshing salad. Parsley is a must.

This is a go to salad for my family. Sometimes I omit the olives. I also mix the vinegar, olive oil, & some lemon juice in a shaker to make a dressing to add after the other ingredients are mixed. It’s delicious & elevates the salad to a side dish.

Made for second time. Minor changes were to add 1/2 an English cucumber, increased the quantity for a crowd, added a couple of Tbs. of fresh mint per suggestions from others, and added about a cup of garbanzo beans. Love this recipe and it doesn’t require changing at all.

Delicious!! I didn’t use chkn broth and substituted the red wine vinegar for wht wine vinegar because I didn’t have red. This salad is great for a cold dinner paired with grilled chkn! Yum

I made as directed. Next time I will omit the lemon altogether. It ruined what was an otherwise very nice flavored salad. (I tasted before adding lemon and it was delicious). I will also try adding cucumber and dill.

Delish for sure. I toasted the quinoa to add a nutty flavor before adding the chicken broth. I made a small mistake of not letting it cool enough before adding the Feta and it melted in–the flavor was still great. It made a lot so I shared with a neighbor and we all ate on it for several days.
