Best Chicken Salad Ever

This chicken salad with raisins recipe calls for canned chicken, but it tastes even better with leftover chunked chicken or turkey. We enjoy the apples, pecans, and raisins in this delicious relish, and a small amount is a pleasant surprise. The creamy salad dressing gives it a lovely finishing touch.

Ingredients

  1. 1 (5 ounce) can chunk chicken, drained and flaked
  2. 1 large apple, cored and diced
  3. ⅔ cup raisins
  4. ½ stalk celery, chopped
  5. ½ cup chopped pecans
  6. 3 tablespoons plain fat-free Greek yogurt
  7. 1 teaspoon sweet pickle relish
  8. salt and ground black pepper to taste

Instructions

  1. Mix chicken, apple, raisins, celery, pecans, yogurt, and relish together in a bowl; season with salt and pepper.
  2. Cover bowl with plastic wrap and refrigerate until chilled, at least 30 minutes.
  3. Cucumber is an interesting substitution possibility for the celery.

I like it creamier so I added honey mustard and organic vegannaise, also added a little fresh lemon juice and some monk fruit sugar for my sweet tooth. YUMMM

What a refreshing recipe for chicken salad. I used caned chicken breast and chopped up a pickle as I didn’t have relish. Thank you for a delicious recipe.

I used leftover rabbit for the chicken. I didn’t have yogurt so used sour cream and subbed the pecans with walnuts. It’s very tasty.

I made two changes–I used 2% plain Greek yogurt and for the dried fruit a mix of raisins, golden raisins, and cranberries. I do think I would have liked a little something added to the yogurt–maybe a little lemon juice or even a touch of lemon curd. I’ll experiment a little because the salad ingredients are wonderful. I used Costco’s canned chicken, but I’m thinking I’d almost rather use a more solid form of chicken (I’m envisioning something like Trader Joe’s Just Chicken). It does get better with age, so while it made a good lunch yesterday, I think tomorrow the leftovers will make an even better one! Thanks, pepper.
