Ingredients

  1. 6 eggs
  2. ½ pound bacon
  3. 2 pounds spinach, rinsed and chopped
  4. 2 ¾ ounces croutons
  5. ¼ cup sliced fresh mushrooms
  6. 1 onion, chopped
  7. ⅔ cup white sugar
  8. 1 teaspoon salt
  9. 1 cup vegetable oil
  10. ⅓ cup cider vinegar
  11. ½ teaspoon ground black pepper
  12. 1 teaspoon celery seed
  13. 1 tablespoon prepared Dijon-style mustard

Instructions

  1. Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. Once cool, peel and chop.
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  3. Prepare the dressing in a blender by combining the onion, sugar, salt, oil, vinegar, pepper, celery seed and Dijon mustard. Blend until smooth.
  4. In a large salad bowl, combine the eggs, bacon, spinach, croutons and mushrooms. Toss to mix. Pour enough dressing over salad to lightly coat. Toss and serve.

Out of this world delicious! I follow the recipe exactly as written and have used 2 large bags of baby spinach instead of 2 lbs and it works just as well.

I first had this at a friend’s house and enjoyed it so I am happy to find the recipe here! I only used 1/2 of a Vidalia onion. 1/2 canola oil and 1/2 olive oil. Lots of baby Bella mushrooms. It makes such an attractive salad!

I followed the recipe with a few healthy changes and used less spinach, even less than 1 lb.: I omitted croutons, replaced veg oil with extra virgin olive oil, and used just one packet of stevia in place of the sugar. It was delicious.

I’m not sure why this salad is so good, but for goodness sake, it’s a winner! The simplicity of the salad and the vinaigrette can’t be overstated. I made as written. I found the vinegars to be just a little overpowering. I plan to make it again and use 1/8 cup each of the apple cider and white vinegars and make up the final 1/4 cup vinegar with a slightly sweeter balsamic of some type.

Awesome salad!! Flavours combine perfectly with each other. Note to self… for dressing: a half batch is plenty. Eliminate the pepper, cut the sugar in half, double the dijon, substitute balsamic for cider vinegar, use 1/4 large sweet onion. Can use shredded chicken in place of, or in addition to, hard-boiled eggs.

I absolutely love this recipe. When I was in law school, the law dorms used to make a recipe just like this. I was so elated to find this recipe which matches it to a tee. Cut the recipe in half since only 3 of us were eating. Followed directions except I did not have celery seed. I also used a shallot onion. I also did not put the onion in the blender, I instead cooked it in some of the bacon drippings and then warmed the dressing up in the sautéed onions.

Hubby gives this one a 5 – I would say 4. Very good, but the amounts seem a bit off. I used 1/2 bag of spinach and changed the recipe to four servings for everything else. Could probably use more spinach and have a nice balance. The dressing was fantastic, even with honey mustard instead of dijon and cutting the sugar by about 1/2.

Wow. This recipe is great. The dressing is awesome. I doubt they mean 2lbs spinach. I used a 9oz bag of baby spinach and just backed down the ingredients slightly. I kept the dressing on the side. Wife was really impressed with this one.
