Ingredients
- 2 avocados – peeled, pitted, and cubed
- 2 tomatoes, diced
- 1 small sweet onion, chopped
- 1 pound cooked salad shrimp
- 1 pinch salt and pepper to taste
- 2 tablespoons lime juice
Instructions
- Stir together avocadoes, tomatoes, onion, and shrimp in a large bowl. Season to taste with salt and pepper. Stir in lime juice. Serve cold.

Good basis for a delicious, colorful summer salad. I did add some ingredients suggested by other reviewers… good olive oil (just a little), english cucumbers and salted pumkin seeds. Huge hit! Will make it again. Thank you for a great salad!

Took advantage of Costco’s tiny cocktail shrimp and bags of avocados to pull together this recipe. This really is a recipe you can easily work with which ranks it high with me. My additions; red bell pepper and cucumber were added for color, a little crunch, and to make it more like a side salad than a simple meal. I used a “sweet onion” as directed and used maybe ? of it because of the negative comments pertaining to too much onion. May be personal taste but I thought the salad could easily handle a full onion. Other additions I would’ve considered if had on hand or in garden include cilantro, dill, fennel, yellow tomatoe, radish, Artichoke hearts, green olives, another size of shrimp or just more shrimp. Thank you for sharing wonderful recipe.

My husband loved this! As some suggested, I added chopped cucumber, a little olive oil, cilantro, green onion (because I didn’t have red), some crushed pepper and feta cheese. Delicious!
Awesome! Could serve multiple ways – as a sandwich filling or in a martini glass with artisan crackers. I left it chunky using jumbo shrimp.
It was okay but needed something. Sautéing was a mistake. It killed the onion and disguised the lime juice. My wife liked it but she’s an avocado freak. I tried a lime juice and white wine mix as a dressing on the leftovers and that WORKED. I will make it again with two tablespoons each of the juice and wine as a dressing sprinkled on just before tossing things.

We really enjoyed this dish. As suggested by other reviewers I added a few more ingredients. I added corn and cucumbers and instead of just squeezing lime, I added some olive oil and hot sauce. I will be making it often. This is a wonderful summer dish.

I added chopped cilantro and subbed red onion for sweet. I served over chopped romain. Very good.
