Reviews
Good flavor. Can’t taste the mint, but the peanuts create great texture with the house pickled cucumbers.
Made this 7/21 and we loved it!
I would make again! fresh, fast and tasty!
Didn’t change anything, it was great. Will definitely make it again.
This was so good, perhaps our favorite cucumber salad yet. The red pepper flakes add an unexpected zing. I used toasted cashews instead of peanuts as I didn’t have those; other than slightly over-toasting them (oops) they were a good substitute. Everything else was per the recipe, and I don’t think I’d make any adjustments the next time I make it.
This was delicious. I didn’t have time to let it sit before eating, but it was still very good. I love all the flavors. I will definitely make it again.
I left the tomatoes out and added inly sliced sweet onion instead. It was very good will add that to my list of salads to make and enjoy.
I was very skeptical about this salad, but since I had all the fresh ingredients in my garden, I decided to make it. Everyone loved it! I found it to be super easy and perfect for a hot summer evening book club discussion. I would definitely make it againl
This was excellent exactly as described, I wouldn’t change a thing! The combination of cilantro and mint is really refreshing with the cucumbers
I love this recipe. I leave out the peanuts because I don’t like them, but it tastes wonderful without them!
Very good and easy. I made it exactly as written except I substituted cherry tomatoes for the Romas. I’ll definitely be adding this to my rotation of cucumber salads!
I followed the recipe exactly except used tomatoes from my garden instead of Roma. This is, without question, my favorite cucumber recipe of all time. Surprisingly, it is still good after 3 days. It says it is 4 servings. I would say more like 6 generous servings.
7 29 17 …https://www.allrecipes.com/recipe/201910/asian-cucumber-thai-salad/ … Sweetness is so dominating, it’s difficult to judge. Beautiful though.
Only use 1/4 cup vinegar; 1/4 sugar.
I used Stevia instead of the sugar for the dieters in my house, but other than that, made it as directed. My mother-in-law loves this. It’s a bit sweet for me, and I feel that it needs a touch of fish sauce or soy sauce, which I’ll add when I make this again.
Great salad, so refreshing! Made it with my sister who doesn’t like cilantro, so we left that out. Substituted the peanuts with cashews as well. Will definitely be making this salad again and again.
I add a piece of ginger and clove crush garlic to the rice vinegar and sugar, then put on low heat to melt sugar, strain and let cool then add pepper flakes, pour over cucumber and red onions, cover and put in refridgerator, sprinkle with peanuts and cilantro when ready to serve.
Excellent! I used fresh cucumbers, tomatoes and mint from my garden. Yummy and healthy. Thanks Kris10.
Good! Refreshing and lots of flavor.
Great summer salad. Great favors. Didn’t have mint used 1/2 the sugar. Still amazing!
awesome! the only changei made was I used half rice wine vinegar and half white vinegar. my husband nearly drank the leftovers. thanks
