Ingredients

  1. 2 cooked boneless, skinless chicken breast halves, shredded
  2. ½ head cabbage, finely shredded
  3. ½ cup corn kernels
  4. ¼ cup chopped fresh cilantro
  5. 2 green onions, chopped
  6. 3 tablespoons sliced almonds
  7. ½ cup mayonnaise
  8. 2 tablespoons rice wine vinegar
  9. 1 ½ tablespoons lemon juice
  10. 1 tablespoon white sugar
  11. 2 teaspoons ground black pepper
  12. 1 teaspoon salt
  13. 1 teaspoon chile-garlic sauce (such as Sriracha®)
  14. 1 teaspoon paprika
  15. 1 teaspoon red pepper flakes
  16. ½ teaspoon minced garlic
  17. ½ teaspoon sesame oil
  18. ½ teaspoon honey
  19. ⅛ teaspoon ground ginger
  20. 12 dinner rolls

Instructions

  1. Combine chicken, cabbage, corn, cilantro, green onions, and almonds in a bowl.
  2. Whisk mayonnaise, rice vinegar, lemon juice, sugar, black pepper, salt, chile-garlic sauce, paprika, red pepper flakes, garlic, sesame oil, honey, and ginger in a separate bowl until sugar has dissolved.
  3. Stir dressing into chicken mixture to thoroughly coat salad with dressing.
  4. Hollow out dinner rolls to make small bowls; fill rolls with salad to serve.

Completed as instructed but omitted the cabbage as I didn’t have any on hand. Just spread the mixture on a four tortilla, sprinkled chopped romaine over the chicken and rolled them up. Excellent flavor!

This is my recipe, just wanted to note that as written this has a tasty but mild flavor. It’s so easy to change up this recipe according to your personal tastes- personally, I generally up the garlic, chile-garlic sauce, lemon juice, sesame oil, and vinegar when cooking for my husband and myself. I enjoy eating this plain with a fork, but it’s also good served on a bed of lettuce or on a sandwich. Serving in a bread “cup” makes this super easy to eat and easy to send with my husband for lunch.
