Ingredients
- 4 cups arugula
- 8 strawberries, stemmed and sliced
- 2 tablespoons aged balsamic vinegar, or to taste
- 2 tablespoons extra-virgin olive oil, or to taste
- 2 tablespoons toasted almonds
- 1 ounce crumbled feta cheese
- sea salt to taste
Instructions
- Combine arugula, strawberries, balsamic vinegar, olive oil, almonds, feta cheese, and sea salt together in a bowl; toss until well combined.

I made the strawberry vinaigrette. I used arugula like mentioned in the above recipe. I used toasted almonds and manchego cheese instead. it complimented the arugula and vinaigrette perfectly. I also put some grape tomatoes on it.
Fresh local strawberries are abundant here on Cape Cod. What a wonderful way to enjoy them.
Instead of the oil and vinegar, I used Raspberry walnut dressing. It was yummy!
so easy to put together and delish!
Used my own store-bought dressing and added some grilled chicken. Yum!

This is our FAVORITE salad. I use feta or gorgonzola cheese and I use a raspberry walnut balsamic dressing
7.27.16 The peppery arugula provides a good contrast to the sweet strawberries. The almonds add a nice crunch, and the feta gives just a little tang. I mixed up the dressing using white balsamic vinegar and for my taste, only added about half of it (personal taste preference). The only change was adding a good grind of freshly-ground pepper. acali07, thanks for a very, very nice salad for lunch today!
