The kids’ favorite oatmeal cookie recipe is this one. Although I occasionally add approximately 1/2 cup of chopped walnuts or pecans, it doesn’t call for nuts.

Ingredients

  1. 5 pounds red potatoes
  2. 6 eggs
  3. 2 cups mayonnaise
  4. 1 onion, diced
  5. 2 green onions, thinly sliced
  6. 1 small green bell pepper, seeded and diced
  7. 3 stalks celery, thinly sliced
  8. 2 teaspoons salt
  9. 1 teaspoon ground black pepper

Instructions

  1. Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes, or until tender but still firm. Drain, cool and cut into cubes.
  2. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  3. In a large bowl, combine chopped potatoes and eggs. Mix together mayonnaise, chopped onion, green onion, green pepper, and celery. Season with salt and pepper, then mix well. Cover, and refrigerate for several hours or overnight.

Okay, but not the best potato salad I’ve ever eaten. I thought the portions were a bit odd too (too much potatoes vs other ingredients?). And my eggs didn’t peel easily even though I followed the recipe’s egg boiling method 🙁 Still, good enough salad though! And on the plus side really easy to make :))

Excellent. Exactly what I was looking for. I added a little diced red pepper, 1/8 tsp. Garlic powder, & 1/4 tsp. Onion powder. Its’s perfect. Delicious!!!Thank you

I added bacon, added 1/2 cup sour cream, and white vinegar. Turned out lovely if I do say so myself.

Used Russet instead of Red potatoes. Used Red onions instead of Green onions. Good basic recipe for potato salad that you can modify for available ingredients or to suit your tastes. I made a lot of it so it sits in a 1 gallon freezer bag in the bottom of my fridge for any time I get the urge for it. Keeps well.

Excellent, just like my grandmother used to make. I only wanted to make enough for two people so I used 3 large red pot, 2 boiled eggs, 1 stalk of celery, and cut everything else by 1/4. I added some sweet relish as it needed some sweetness. The pot were cooked after boiling 15 min. I spread them out in a sheet pan to cool and put the mayo mixture on top of hot pot, when cool I mixed well. Served the next day. BTW, it was still enough to serve 6 people.

Found this when searching for a potato salad without vinegar or mustard and it came out very well. Next time would half it; the only thing that I changed was to add 1 1/2 tsp of dried dill, fried up some bacon for the top, and sprinkled some paprika on top for the presentation. I usually make a German Potato Salad, but we’ll definitely be revisiting this one.

Good basic recipe but the times were a bit off. I tried to cook eggs for 12 minutes and they were a bit under done. Cooked potatoes for 20 minutes and they were a bit too hard. Need to add a bit more time to both.

Guess I’m used to my Mom’s potato salad which had Yukon gold or a white potato, mayo, diced celery, sweet relish, diced sweet onion, chopped boiled eggs, dijon mustard, & salt & pepper. So simple, yet so good. I did like this one; wasn’t bad at all.

I made this for 4th of July and my family loved it! I used miracle whip instead of mayonnaise and I left out the green pepper and it was a huge hit. I also only used 5 eggs because that was all I had left. Will definitely make every year!
