My carrot salad has a coconut-based touch to it. As much as my friends and fiance do, I hope you appreciate it.

Ingredients

  1. 3 large carrots, shredded
  2. 1 cup raisins
  3. 1 cup walnuts
  4. ¼ cup finely chopped celery
  5. 2 tablespoons shredded coconut
  6. ½ cup mayonnaise
  7. 2 tablespoons sour cream
  8. 1 tablespoon cider vinegar
  9. ½ teaspoon white sugar
  10. ¼ teaspoon salt

Instructions

  1. In a medium bowl, combine shredded carrots, raisins, walnuts, celery, and coconut. Whisk together mayonnaise, sour cream, vinegar, sugar, and salt. Stir dressing into carrot mixture. Chill a few hours before serving.

Easy to make & delicious is a good combination. The shredded coconut makes a superb addition. I used what I had & substituted it w/peanuts (walnuts), dried cranberries (raisins) & left out the sour cream. I’m sure the exact recipe is even better.

This was SO yummy! The combination of flavors and textures is fantastic. The clever addition of shredded coconut, celery, and nuts is different, but oh-so-good! YUM. My boyfriend and his son are definitely “meat and potatoes” types. So it’s satisfying to see them gobble up veggies! I did not have raisins, so I used dried cranberries. Cut the mayo in half and added the zest and juice of half a lemon. Next time I think I will plump the cranberries in the lemon juice and /or vinegar in the microwave for a few seconds.

Everyone enjoyed….different and yummy. Used fat free plain yogurt, low fat made w/ olive oil mayo, and reduced fat for cream for the dressing. I liked the coconut and raisins in this and the crunch of the walnuts. Will make again. Thanks !

Delicious!!!! I didn’t have sour cream – I used 1/3 cup low fat mayo – and left out the celery too. Wonderful! Absolutely Perfect!
