Ingredients
- 1 clove garlic, minced or grated
- 1 small Fresno chile or jalapeno pepper, seeded and minced
- 6 to 9 tablespoons extra-virgin olive oil (depending on how acidic you like your salad dressings)
- 3 tablespoons red wine vinegar
- Kosher salt and freshly ground black pepper
- 1/4 cup finely torn or finely chopped fresh mint
- 3 cups large diced red seedless watermelon
- 1/2 cup diced English cucumber
- 1/4 cup finely sliced scallions
- 1/2 cup Greek feta cheese, crumbled
Instructions
- Add the garlic, Fresno, olive oil and vinegar to a glass jar with a lid. Season with salt and pepper, then add the mint. Place the lid on and shake vigorously to combine. Set aside.
- When ready to serve, combine the watermelon, cucumber and scallions in a large bowl. Dress with the vinaigrette and gently toss to combine. Sprinkle the crumbled feta on top. Serve chilled.

I was so excited to try this recipe with a smoked brisket and my sweet potato grits….the final finishing touch was the salad! I did increase the chili (red jalapeño) but everyone gave two thumbs up. Love the show and recipes!
Perfect summer salad. I grilled the watermelon just to get some car marks on. Was the perfect complement with Michael Symon’s gyro burgers.

Delicious and easy to make.
Love this with the heat of the pepper and the garlic. Much more interesting than many of the watermelon feta salads out there. I subbed half lemon and half lime juice for the vinegar for a lighter, fruitier taste.

Loved this recipe. I used Symon’s suggestions. I didn’t have fresh mint so I used fresh basil and didn’t have a jalapeno pepper, so I used red pepper flakes. Awesome flavor’s!
