This slightly sweet and savory watermelon-feta salad has cucumbers, olives and refreshing mint.

Ingredients
- 1/2 medium watermelon (about 3 pounds)
- 1 English cucumber, sliced into thin rounds
- One 4-ounce block feta, cut into 1/2-inch pieces
- 1/2 cup pitted kalamata olives, halved or quartered
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- Fresh mint leaves for garnish
Instructions
- Cut the rind off the watermelon and cut the fruit into 1-inch cubes and transfer to a large serving bowl (you should have about 6 cups total). Top with the cucumber, feta and olives. Pour the oil over top and season with a large pinch of salt and pepper. Sprinkle with mint leaves and gently stir to combine right before serving.
