Ingredients
- 3 pounds kohlrabi, peeled and quartered (about 4 kohlrabi)
- 4 medium carrots
- 2 cloves garlic
- 1/4 cup olive oil
- 1 quart cherry tomatoes (multi-color if available)
- 4 scallions, sliced thin
- 2 packed cups parsley leaves, chopped
- 2 tablespoons lemon juice
- Kosher salt and freshly ground black pepper
Instructions
- Shred the kohlrabi, carrots and garlic in a food processor fitted with the shredder attachment.
- Heat the olive oil in a large skillet over high heat. Add the tomatoes, followed by the shredded vegetables. Saute for 3 to 5 minutes. Season with salt and pepper, and then add the scallions, parsley and lemon juice, stirring until incorporated. Simmer for 10 to 15 minutes.

We selected this recipe as our first dive into kohlrabi. Like others said, “Feeding an army?!” I cut the recipe in half, plenty for the two of us. We used one can of diced tomatoes instead of cherry, it was fine Quite tasty, despite the surprisingly light seasoning the recipe calls for. Will make this one again

I was introduced to Kohlrabi a few years ago and have searched for some great recipes since then. Today’s show prompted me to buy kohlrabi and prepare the recipe. I halved the recipe as I live alone and didn’t want a lifetime supply. It was the BEST!
I made this when I saw the episode earlier this year and coincidentally received Kohlrabi in my CSA (Community Supported Agriculture). This dish was so so so good. Honestly It was a tester recipe that I wasn’t sure about and we were pleasantly surprised how yummy it was!! The flavors melded together and my husband and I both loved it. I remember that it reheated fine too.
Fast-forward to today. I found some Kohlrabi and want to make it this week. I looked back at this recipe online, curious if there were any reviews and there were not, so I want to share how yummy it is and encourage you all to try it if you come across the delightfully alien looking vegetable, Kohlrabi.
