Ingredients

  1. 1 medium sweet onion, finely diced
  2. 1 pound ground white meat chicken (white meat only, no fat)
  3. 1/4 to 1/3 cup lime juice, plus 1 lime, zested
  4. 1 package taco seasoning mix
  5. 1 head romaine lettuce, thinly sliced
  6. 1 mango, peeled, seeded, and cut into 1/2-inch chunks
  7. 1 tomato, cored, cut into 6 to 8 wedges
  8. 1 cup shredded carrots
  9. 1/2 cup thinly sliced scallions
  10. 3/4 cup cooked canned, white beans or black beans, (fat free, sugar free) rinsed and drained
  11. 1 avocado, peeled, seeded and cut into 8 wedges
  12. 1 (16-ounce) jar sugar free, fat free tomato salsa
  13. 16 baked taco chips
  14. 4 pickled jalapenos

Instructions

  1. In a medium saute pan over medium high heat, cook onions in 1 to 2 tablespoons water until softened and cooked through, about 12 to 15 minutes. Cook covered, stirring once or twice, add more water if necessary to keep onions from burning. Add chicken meat, and cook until crumbly and golden, about 7 to 9 minutes. Add citrus juice, zest, and taco seasoning mix, stir until well combined. Taste and adjust seasonings. Set aside to cool.
  2. Arrange lettuce on large platter with remaining ingredients. Top with chicken, garnish with baked chips and jalapenos.

This recepie was quite a let-down. There was minimal to no flavour. Although i’ve had to cater to my family being on diets, i’ve prepared far better myself, i do not recommend this recepie at all. Its’ both flavor-less and insulting to me, my cultures’ food was made to have flavour and passion. this recepie has neither.

This recipe was just ok. Although I liked it because it was healthy, it was a little too sweet for my taste. I’ve only made it once and probably won’t make it again.

Pretty good but Avacodo and other fruit could be left out. Carrots too. Grades or shredded 3 cheese mexican would be better choice for men.
