Sweet and Crunchy Broccoli Salad

Ingredients

  1. 4 cups chopped broccoli in 1/2-inch pieces (from about 2 heads)
  2. 8 ounces pancetta, cut into 1/3-inch dice
  3. 1/2 cup mascarpone
  4. 1/4 cup mayonnaise
  5. 2 tablespoons apple cider vinegar
  6. 1/2 teaspoon kosher salt
  7. 1/2 cup dried cranberries
  8. 1/2 cup walnuts, toasted, chopped
  9. 1/2 cup crumbled aged gorgonzola

Instructions

  1. Bring a large pot of salted water to a boil. Set up a bowl of ice water alongside. Add the broccoli to the pot and blanch for 1 to 2 minutes, just until bright green and crisp. With a slotted spoon, remove the broccoli to the ice water to shock. Drain well.
  2. Place the pancetta in a medium skillet over medium heat. Cook, stirring often, until crispy and browned, about 10 minutes. Drain on paper towels, reserving 1 tablespoon of the fat.
  3. Meanwhile, in a large bowl, use a rubber spatula to mix together the mascarpone, mayonnaise, cider vinegar and salt. Add the broccoli, pancetta, reserved fat, cranberries, walnuts and gorgonzola. Toss well to coat and combine.

I made this with just a few changes. I did not have pancetta so I used bacon, used honey coated sliced almonds instead of walnuts and added about a cup of diced apple and grapes. The drsssing was not sweet at all so I added a couple of teaspoons of sugar and it turned out great!

I saw this today on your show.  It looked wonderful and I can’t wait to try it out on my family.  I cook meals that are low carb, so I’ll find a good substitute for the dried cranberries for my daughter and me, but I know the rest of the family will love it as written.
