Sunny’s Easy Grilled Garden State Salad

Ingredients

  1. 2 tablespoons honey
  2. 1 teaspoon liquid smoke
  3. Two 1-inch slices pork roll
  4. 2 ears corn
  5. Olive oil, for brushing
  6. 3 tablespoons olive oil
  7. 2 tablespoons apple cider vinegar
  8. 1 tablespoon deli mustard
  9. 1 teaspoon chopped fresh cilantro, plus extra for garnish
  10. 2 sprigs fresh thyme, leaves stripped and chopped, plus extra for garnish
  11. 1 clove garlic, grated on a rasp
  12. Kosher salt and freshly ground black pepper
  13. 2 beefsteak tomatoes, seeded and chopped
  14. Chopped fresh cilantro or parsley, for garnish

Instructions

  1. For the pork roll and corn: Preheat the grill to 400 degrees F.
  2. Mix the honey and liquid smoke in a small bowl. Brush on both sides of the pork roll. Brush the corn on all sides with the olive oil. Place the pork roll slices and corn on the grill above the direct heat, flipping the pork once when a peek beneath reveals grill marks, 3 to 5 minutes total, and rolling the corn occasionally to get some charred kernels, about 10 minutes total. Let cool enough to handle, then chop the pork into cubes small enough to fit on your fork with the other ingredients, like corn and tomato. Cut the kernels of corn off the cobs and discard the cobs. Add the pork and corn kernels to a large bowl.
  3. For the dressing: Combine the olive oil, vinegar, mustard, cilantro, thyme, garlic, a pinch of salt and a few grinds of black pepper in a small jar with a lid or in small bowl. Shake or whisk until combined.
  4. For the salad: Add the chopped tomatoes to the bowl with the chopped pork roll and corn. Drizzle over the dressing and gently toss. Garnish with additional chopped cilantro and thyme.

Yum yum and yum! NJ’s best! Nothing better than NJ tomatoes and corn together with pork roll (Taylor ham)!

I moved from New Jersey to Maine and could not find Taylor Ham until I stopped in a German restaurant and store about 30 miles from my house.  And there it was!  I’ll be going back to get some more so I can make this salad.  I’ll write a review after I make it.

This was a light, fun, summery salad.  I didnt have pork so we used a top sirloin steak and it was so yummy.  Most everything I needed for this recipe was an alreasy on hand staple.

We live in Texas ya’ll, but my hubby is New Jersey through and through! He found his Taylor Ham or Taylor Pork Roll (what you call it’s depends on what part of Jersey you are from)! Any who, he found his “pork roll” in Texas! We had Texas tomatoes (alas no Jersey tomatoes ) but we picked maters at our local organic farm, and he fell in love with this salad! It is so flavorful. And of course everyone knows, do NOT refrigerate your maters!

Jersey girl through and through, even though I’m in VA now. Lived in NY State too and really missed my Taylor Ham, they never heard of it!! SAY WHAT??? Jersey corn,and tomatoes….Telling ya, there’s nothing like NJ veggies. Sunny, you’re awesome, you represent. I can’t wait to make this recipe.
