Strawberry Arugula Salad

Ingredients

  1. 1/2 cup extra-virgin olive oil
  2. 1/3 cup champagne vinegar
  3. 1 teaspoon Dijon mustard
  4. 1 teaspoon honey
  5. 1/2 teaspoon kosher salt
  6. 1/4 teaspoon freshly ground black pepper
  7. 1/2 large red onion, sliced
  8. One 5-ounce container baby arugula
  9. 1 cup sliced strawberries
  10. 1/2 cup toasted pine nuts
  11. 1/3 cup freshly grated Parmesan

Instructions

  1. Add the olive oil, champagne vinegar, Dijon mustard, honey, salt and pepper to a large serving bowl. Whisk to combine, then add the sliced onions. Stir the onions to coat them in the dressing. Let the onions marinate in the dressing until they are brighter in color and slightly softened, 15 to 20 minutes.
  2. Add the arugula and strawberries to the bowl with the marinated onions. Toss to combine. Top with the toasted pine nuts and freshly grated Parmesan. Serve immediately.

Delicious salad and very easy to pull together. I’ve made this a few time and I’ve started using walnuts instead of pine nuts since pine nuts are expensive. The onion marinade is also great on everything from other salads to a cold shrimp salad.

This was good, but way over-dressed! Instead of adding the arugula & strawberries to the marinated onions and dressing – I’d suggest decanting off the dressing from the onion after marinating, mixing in the other ingredients, and then adding in the amount of dressing needed. I made this with quiche so too much fat is making me feel nauseous!

I REALLY wanted to LOVE this salad since its two key ingredients are among my favorite foods in the world. I made it exactly as instructed, but there seemed to be too much arugula in comparison to strawberries — and not enough of a savory element to cut through the vinegar.
